Red Velvet Ice Cream Recipe

Ingredients:

  • Ice Cream Base:

    • 2 cups heavy cream

    • 1 cup whole milk

    • 3/4 cup granulated sugar

    • 1/4 cup unsweetened cocoa powder

    • 1 teaspoon vanilla extract

    • 1/4 teaspoon salt

    • 1-2 teaspoons red food coloring (adjust for desired vibrancy)

    • 1 tablespoon white vinegar or lemon juice (for the signature tang)

  • Cream Cheese Swirl:

    • 4 oz cream cheese, softened

    • 1/4 cup powdered sugar

    • 2 tablespoons heavy cream or milk

    • 1/2 teaspoon vanilla extract

  • Mix-Ins (optional):

    • Red velvet cake pieces (store-bought or homemade, cut into small chunks)

    • Chocolate chips or chunks

Instructions:

  1. Prepare the Ice Cream Base:

    • In a large mixing bowl, whisk together the heavy cream, whole milk, sugar, cocoa powder, vanilla extract, salt, and vinegar or lemon juice until the sugar and cocoa are fully dissolved.

    • Add the red food coloring and mix until you achieve a vibrant red color. Start with 1 teaspoon and add more as needed.

    • Cover the mixture and refrigerate for at least 2 hours, or until thoroughly chilled.

  2. Make the Cream Cheese Swirl:

    • In a separate bowl, beat the softened cream cheese until smooth.

    • Add the powdered sugar, heavy cream (or milk), and vanilla extract. Mix until creamy and well combined. Set aside.

  3. Churn the Ice Cream:

    • Pour the chilled ice cream base into your ice cream maker and churn according to the manufacturer’s instructions (usually about 20-25 minutes).

  4. Layer the Ice Cream:

    • Once the ice cream is churned, transfer half of it to a freezer-safe container.

    • Dollop half of the cream cheese swirl mixture over the ice cream, then use a knife or skewer to gently swirl it in.

    • Add a layer of red velvet cake pieces or chocolate chips if desired.

    • Repeat with the remaining ice cream, cream cheese swirl, and mix-ins.

  5. Freeze:

    • Cover the container with parchment paper or plastic wrap pressed directly onto the surface to prevent ice crystals from forming.

    • Freeze for at least 4 hours, or until firm.

  6. Serve:

    • Scoop and enjoy! Garnish with extra red velvet cake crumbs or a drizzle of chocolate sauce for an extra decadent touch.

Tips:

  • For a stronger chocolate flavor, you can add 1-2 tablespoons of melted dark chocolate to the ice cream base.

  • If you don’t have an ice cream maker, you can pour the mixture into a shallow dish and freeze it, stirring every 30 minutes until it reaches the desired consistency.

  • To make red velvet cake pieces, bake a small red velvet cake or cupcake and crumble it into small chunks.
