Red Velvet Ice Cream Recipe
Ingredients:
Ice Cream Base:
2 cups heavy cream
1 cup whole milk
3/4 cup granulated sugar
1/4 cup unsweetened cocoa powder
1 teaspoon vanilla extract
1/4 teaspoon salt
1-2 teaspoons red food coloring (adjust for desired vibrancy)
1 tablespoon white vinegar or lemon juice (for the signature tang)
Cream Cheese Swirl:
4 oz cream cheese, softened
1/4 cup powdered sugar
2 tablespoons heavy cream or milk
1/2 teaspoon vanilla extract
Mix-Ins (optional):
Red velvet cake pieces (store-bought or homemade, cut into small chunks)
Chocolate chips or chunks
Instructions:
Prepare the Ice Cream Base:
In a large mixing bowl, whisk together the heavy cream, whole milk, sugar, cocoa powder, vanilla extract, salt, and vinegar or lemon juice until the sugar and cocoa are fully dissolved.
Add the red food coloring and mix until you achieve a vibrant red color. Start with 1 teaspoon and add more as needed.
Cover the mixture and refrigerate for at least 2 hours, or until thoroughly chilled.
Make the Cream Cheese Swirl:
In a separate bowl, beat the softened cream cheese until smooth.
Add the powdered sugar, heavy cream (or milk), and vanilla extract. Mix until creamy and well combined. Set aside.
Churn the Ice Cream:
Pour the chilled ice cream base into your ice cream maker and churn according to the manufacturer’s instructions (usually about 20-25 minutes).
Layer the Ice Cream:
Once the ice cream is churned, transfer half of it to a freezer-safe container.
Dollop half of the cream cheese swirl mixture over the ice cream, then use a knife or skewer to gently swirl it in.
Add a layer of red velvet cake pieces or chocolate chips if desired.
Repeat with the remaining ice cream, cream cheese swirl, and mix-ins.
Freeze:
Cover the container with parchment paper or plastic wrap pressed directly onto the surface to prevent ice crystals from forming.
Freeze for at least 4 hours, or until firm.
Serve:
Scoop and enjoy! Garnish with extra red velvet cake crumbs or a drizzle of chocolate sauce for an extra decadent touch.
Tips:
For a stronger chocolate flavor, you can add 1-2 tablespoons of melted dark chocolate to the ice cream base.
If you don’t have an ice cream maker, you can pour the mixture into a shallow dish and freeze it, stirring every 30 minutes until it reaches the desired consistency.
To make red velvet cake pieces, bake a small red velvet cake or cupcake and crumble it into small chunks.
Enjoy your homemade Red Velvet Ice Cream! 🍦❤️
