Cheesy Herb Arepas with Avocado Lime Filling 🥑✨
Ingredients:
For the arepas:
- 2 cups precooked cornmeal (masarepa, such as P.A.N.)
- 1½ cups warm water
- ½ cup shredded mozzarella cheese
- 1 tsp salt
- 2 tbsp fresh cilantro or parsley, finely chopped
- 1 tbsp butter (for cooking)
For the avocado lime filling:
- 2 ripe avocados
- Juice of 1 lime
- ½ tsp garlic powder
- ½ tsp chili flakes (optional)
- Salt and pepper to taste
- ½ cup diced tomatoes
- ¼ cup red onion, finely chopped
Optional toppings:
- Sour cream or Greek yogurt
- Extra shredded cheese
- Fresh cilantro leaves
Instructions:
Make the arepa dough:
- In a large bowl, mix the cornmeal and salt. Gradually add warm water, stirring until combined. Let the dough rest for 5 minutes.
- Add shredded cheese and chopped herbs to the dough. Knead gently until smooth and pliable.
Shape the arepas:
- Divide the dough into 6-8 portions. Roll each portion into a ball, then flatten into discs about ½ inch thick.
Cook the arepas:
- Heat a skillet or griddle over medium heat and add a small amount of butter. Cook the arepas for 4-5 minutes on each side until golden and slightly crispy. Optionally, finish them in a 375°F (190°C) oven for 10 minutes to ensure they are cooked through.
Prepare the avocado lime filling:
- In a bowl, mash the avocados with lime juice, garlic powder, chili flakes, salt, and pepper. Stir in the diced tomatoes and red onion.
Assemble the arepas:
- Slice the arepas in half and gently open them like a pocket. Fill with the avocado mixture and your choice of toppings.
Serve:
- Serve warm, with sour cream or yogurt on the side, and garnish with fresh cilantro.
