Ingredients:

  • For the arepas:

    • 2 cups precooked cornmeal (masarepa, such as P.A.N.)
    • 1½ cups warm water
    • ½ cup shredded mozzarella cheese
    • 1 tsp salt
    • 2 tbsp fresh cilantro or parsley, finely chopped
    • 1 tbsp butter (for cooking)
  • For the avocado lime filling:

    • 2 ripe avocados
    • Juice of 1 lime
    • ½ tsp garlic powder
    • ½ tsp chili flakes (optional)
    • Salt and pepper to taste
    • ½ cup diced tomatoes
    • ¼ cup red onion, finely chopped
  • Optional toppings:

    • Sour cream or Greek yogurt
    • Extra shredded cheese
    • Fresh cilantro leaves

Instructions:

  1. Make the arepa dough:

    • In a large bowl, mix the cornmeal and salt. Gradually add warm water, stirring until combined. Let the dough rest for 5 minutes.
    • Add shredded cheese and chopped herbs to the dough. Knead gently until smooth and pliable.
  2. Shape the arepas:

    • Divide the dough into 6-8 portions. Roll each portion into a ball, then flatten into discs about ½ inch thick.
  3. Cook the arepas:

    • Heat a skillet or griddle over medium heat and add a small amount of butter. Cook the arepas for 4-5 minutes on each side until golden and slightly crispy. Optionally, finish them in a 375°F (190°C) oven for 10 minutes to ensure they are cooked through.
  4. Prepare the avocado lime filling:

    • In a bowl, mash the avocados with lime juice, garlic powder, chili flakes, salt, and pepper. Stir in the diced tomatoes and red onion.
  5. Assemble the arepas:

    • Slice the arepas in half and gently open them like a pocket. Fill with the avocado mixture and your choice of toppings.
  6. Serve:

    • Serve warm, with sour cream or yogurt on the side, and garnish with fresh cilantro.

Optional Variations:
