Tiramisu

(A classic Italian dessert featuring layers of espresso-soaked ladyfingers, a rich mascarpone cream, and a dusting of cocoa powder.)


Ingredients

For the Cream Filling:

  • 4 large egg yolks
  • ½ cup granulated sugar
  • 1 cup mascarpone cheese, room temperature
  • 1 cup heavy whipping cream

For the Coffee Soak:

  • 1 ½ cups espresso or strong brewed coffee, cooled
  • 2 tbsp coffee liqueur (such as Kahlúa or Marsala wine) (optional)

For Assembly:

  • 24 ladyfinger biscuits (savoiardi)
  • 2 tbsp unsweetened cocoa powder
  • Dark chocolate shavings (optional, for garnish)

Instructions

1. Prepare the Mascarpone Cream:

  • In a heatproof bowl, whisk egg yolks and sugar together.
  • Place the bowl over a double boiler (a saucepan with simmering water) and whisk constantly for about 5 minutes, until the mixture thickens and becomes pale.
  • Remove from heat and let it cool slightly.
  • Whisk in the mascarpone cheese until smooth.

2. Whip the Cream:

  • In a separate bowl, beat heavy whipping cream until stiff peaks form.
  • Gently fold the whipped cream into the mascarpone mixture until fully combined.

3. Soak the Ladyfingers:

  • In a shallow dish, mix espresso and coffee liqueur (if using).
  • Quickly dip each ladyfinger into the coffee mixture for 1-2 seconds per side (don’t soak too long, or they’ll become too soft).

4. Assemble the Tiramisu:

  • Arrange a layer of coffee-soaked ladyfingers in a single layer in a baking dish (about 8x8 inches).
  • Spread half of the mascarpone cream evenly over the ladyfingers.
  • Repeat with another layer of soaked ladyfingers, then spread the remaining mascarpone cream on top.

5. Chill & Serve:

  • Cover and refrigerate for at least 4 hours (preferably overnight) for the best flavor.
  • Before serving, dust with cocoa powder and garnish with dark chocolate shavings (optional).
