Crema Catalana

(A traditional Spanish dessert from Catalonia, featuring a silky custard topped with a crisp caramelized sugar crust.)


Ingredients

  • 2 cups whole milk
  • 4 large egg yolks
  • ½ cup granulated sugar (plus extra for caramelizing)
  • 1 tbsp cornstarch
  • 1 strip lemon peel (avoid the white pith)
  • 1 strip orange peel
  • 1 small cinnamon stick

Instructions

1. Infuse the Milk:

  • In a saucepan, heat the milk over medium heat.
  • Add the lemon peel, orange peel, and cinnamon stick.
  • Bring to a gentle simmer, then remove from heat and let it infuse for 10 minutes.

2. Prepare the Custard Base:

  • In a bowl, whisk the egg yolks, sugar, and cornstarch until smooth.
  • Slowly pour the warm infused milk into the egg mixture, whisking constantly.

3. Cook the Custard:

  • Strain the mixture back into the saucepan and cook over low heat, stirring continuously.
  • Cook until the custard thickens and coats the back of a spoon (about 5-7 minutes).
  • Remove from heat and let it cool slightly.

4. Chill the Custard:

  • Pour the custard into shallow ramekins.
  • Let cool to room temperature, then refrigerate for at least 4 hours.

5. Caramelize the Sugar:

  • Sprinkle a thin layer of granulated sugar on top of each custard.
  • Using a kitchen torch, caramelize the sugar until golden and crisp. (Alternatively, place under a broiler for a few minutes.)

6. Serve & Enjoy:

  • Let the sugar harden for a minute, then serve immediately.
