Crema Catalana

Ingredients
- 2 cups whole milk
- 4 large egg yolks
- ½ cup granulated sugar (plus extra for caramelizing)
- 1 tbsp cornstarch
- 1 strip lemon peel (avoid the white pith)
- 1 strip orange peel
- 1 small cinnamon stick
Instructions
1. Infuse the Milk:
- In a saucepan, heat the milk over medium heat.
- Add the lemon peel, orange peel, and cinnamon stick.
- Bring to a gentle simmer, then remove from heat and let it infuse for 10 minutes.
2. Prepare the Custard Base:
- In a bowl, whisk the egg yolks, sugar, and cornstarch until smooth.
- Slowly pour the warm infused milk into the egg mixture, whisking constantly.
3. Cook the Custard:
- Strain the mixture back into the saucepan and cook over low heat, stirring continuously.
- Cook until the custard thickens and coats the back of a spoon (about 5-7 minutes).
- Remove from heat and let it cool slightly.
4. Chill the Custard:
- Pour the custard into shallow ramekins.
- Let cool to room temperature, then refrigerate for at least 4 hours.
5. Caramelize the Sugar:
- Sprinkle a thin layer of granulated sugar on top of each custard.
- Using a kitchen torch, caramelize the sugar until golden and crisp. (Alternatively, place under a broiler for a few minutes.)
6. Serve & Enjoy:
- Let the sugar harden for a minute, then serve immediately.
