Steirische Forelle (Styrian Trout)


(A delicious Styrian-style trout dish, featuring crispy pan-fried fish with a nutty pumpkin seed crust and served with a tangy salad.)


Ingredients

For the Trout:

  • 2 fresh whole trout, cleaned and patted dry
  • Salt & black pepper, to taste
  • ½ cup all-purpose flour
  • 2 large eggs
  • 1 tbsp milk
  • 1 cup fine breadcrumbs
  • ½ cup Styrian pumpkin seeds, finely chopped (or ground into coarse crumbs)
  • 3 tbsp Styrian pumpkin seed oil (or substitute with neutral oil)
  • 2 tbsp unsalted butter
  • 1 lemon, cut into wedges

For the Styrian Potato Salad (Side Dish):

  • 1 lb small waxy potatoes, boiled and sliced
  • ½ small red onion, finely diced
  • ¼ cup vegetable broth
  • 2 tbsp white wine vinegar
  • 1 tsp Dijon mustard
  • 3 tbsp Styrian pumpkin seed oil
  • Salt & black pepper, to taste
  • 1 tbsp fresh chives or parsley, chopped

Instructions

1. Prepare the Trout:

  1. Season the trout inside and out with salt and pepper.
  2. Set up a breading station:
    • Place flour in one shallow dish.
    • In a second dish, whisk eggs and milk together.
    • In a third dish, combine breadcrumbs and finely chopped pumpkin seeds.
  3. Dredge each trout in flour, then dip in the egg mixture, and finally coat with the pumpkin seed breadcrumb mixture.

2. Fry the Trout:

  1. Heat pumpkin seed oil and butter in a large pan over medium heat.
  2. Fry the trout for 4-5 minutes per side, until golden brown and crispy.
  3. Transfer to a plate and let rest for a minute before serving.

3. Make the Styrian Potato Salad:

  1. In a small saucepan, heat vegetable broth, then whisk in vinegar, mustard, salt, and pepper.
  2. Pour over the warm sliced potatoes and mix in red onions.
  3. Drizzle with pumpkin seed oil and sprinkle with chives or parsley.

4. Serve & Enjoy:

  • Serve the crispy trout with lemon wedges and a side of Styrian potato salad.
  • Drizzle extra pumpkin seed oil on top for authentic Styrian flavor!
