This Hazelnut Ice Cream is rich, nutty, and irresistibly creamy, with a deep roasted hazelnut flavor that pairs perfectly with chocolate, caramel, or coffee.


Ingredients

For the Hazelnut Base:

  • 1 cup (150g) hazelnuts, toasted and skinned
  • 2 tbsp honey or maple syrup (for enhanced nuttiness, optional)
  • 2 cups (500ml) whole milk
  • 1½ cups (375ml) heavy cream
  • ¾ cup (150g) granulated sugar

For the Ice Cream Base:

  • 4 large egg yolks
  • ½ cup (120ml) hazelnut paste (or store-bought hazelnut spread)
  • 1 tsp vanilla extract
  • ½ tsp salt

Optional Add-Ins:

  • ½ cup (75g) chopped toasted hazelnuts (for extra crunch)
  • ½ cup (75g) dark chocolate chunks or Nutella swirls

Instructions

Step 1: Infuse the Hazelnut Flavor

  1. Toast hazelnuts in a 350°F (175°C) oven for 10 minutes until golden and fragrant. Let cool, then rub them in a towel to remove the skins.
  2. In a saucepan, combine milk, heavy cream, sugar, and toasted hazelnuts over medium heat. Stir occasionally and let steep for 15 minutes. Do not boil.
  3. Strain the mixture, pressing the hazelnuts to extract their flavor. Discard the solids.

Step 2: Prepare the Ice Cream Base

  1. In a bowl, whisk the egg yolks until pale and creamy.
  2. Slowly pour ½ cup of the warm hazelnut-infused milk into the yolks while whisking to temper them.
  3. Gradually pour the tempered yolks back into the saucepan, stirring continuously over low heat for 5–7 minutes, until thickened (it should coat the back of a spoon).
  4. Remove from heat and stir in hazelnut paste, vanilla extract, and salt.
  5. Strain again for a smooth texture. Let cool to room temperature, then refrigerate for at least 4 hours or overnight.

Step 3: Churn the Ice Cream

  1. Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions (20–25 minutes).

Step 4: Add Mix-Ins & Freeze

  1. In the last 5 minutes of churning, fold in chopped hazelnuts or chocolate chunks (optional).
  2. Transfer to an airtight container and swirl in Nutella or extra hazelnut paste for added richness.
  3. Freeze for 4–6 hours until firm.

Step 5: Serve & Enjoy

  1. Scoop into bowls or cones, drizzle with chocolate sauce, and top with crushed hazelnuts for extra crunch!
