Ingredients:

For the Ice Cream Base:
  • 8 oz (225g) cream cheese, softened
  • 1½ cups (375ml) heavy cream
  • 1 cup (250ml) whole milk
  • ¾ cup (150g) granulated sugar
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice
  • Pinch of salt
For the Mix-Ins:
  • 1 cup (100g) graham cracker crumbs
  • 2 tbsp unsalted butter, melted
  • Optional: ½ cup (120ml) fruit sauce (e.g., strawberry, blueberry, or raspberry) for swirls

Instructions:

Step 1: Prepare the Graham Cracker Crumble

  1. In a small bowl, combine the graham cracker crumbs and melted butter until the mixture resembles wet sand.
  2. Spread the mixture onto a baking sheet lined with parchment paper and bake at 350°F (175°C) for 8–10 minutes, or until golden brown. Let it cool completely and break into small chunks.

Step 2: Blend the Cheesecake Base

  1. In a blender or food processor, combine the softened cream cheese, heavy cream, whole milk, sugar, vanilla extract, lemon juice, and a pinch of salt. Blend until smooth and creamy.
  2. Pour the mixture into a bowl, cover with plastic wrap, and refrigerate for at least 4 hours or overnight to chill completely.

Step 3: Churn the Ice Cream

  1. Pour the chilled cheesecake mixture into an ice cream maker and churn according to the manufacturer’s instructions (usually 20–25 minutes).

Step 4: Add Mix-Ins

  1. During the last few minutes of churning, gently fold in the graham cracker crumbles.
  2. If adding a fruit swirl, transfer half of the churned ice cream to an airtight container, dollop half of the fruit sauce over it, and swirl gently with a knife.
  3. Add the remaining ice cream on top, followed by the rest of the fruit sauce, and swirl again.

Step 5: Freeze and Serve

  1. Smooth the top of the ice cream with a spatula, cover, and freeze for 4–6 hours or until firm.
  2. Scoop into bowls or cones and garnish with extra graham cracker crumbs or fresh fruit.
