Cheesecake Ice Cream Recipe
Ingredients:
Ice Cream Base:
2 cups heavy cream
1 cup whole milk
3/4 cup granulated sugar
8 oz cream cheese, softened
1 teaspoon vanilla extract
1/4 teaspoon salt
1 tablespoon lemon juice (for tanginess)
Graham Cracker Swirl:
1 cup graham cracker crumbs
2 tablespoons melted butter
2 tablespoons brown sugar
Optional Toppings/Mix-Ins:
Strawberry compote (or any fruit compote)
Caramel sauce
Fresh berries
Instructions:
Prepare the Ice Cream Base:
In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
Gradually add the sugar, vanilla extract, salt, and lemon juice, mixing until fully combined.
Slowly pour in the heavy cream and whole milk, whisking until the mixture is smooth and well incorporated.
Cover the mixture and refrigerate for at least 2 hours, or until thoroughly chilled.
Make the Graham Cracker Swirl:
In a small bowl, mix the graham cracker crumbs, melted butter, and brown sugar until the crumbs are evenly coated. Set aside.
Churn the Ice Cream:
Pour the chilled ice cream base into your ice cream maker and churn according to the manufacturer’s instructions (usually about 20-25 minutes).
Layer the Ice Cream:
Once the ice cream is churned, transfer half of it to a freezer-safe container.
Sprinkle half of the graham cracker mixture over the ice cream, then use a knife or skewer to gently swirl it in.
If using fruit compote or caramel sauce, drizzle a layer over the ice cream.
Repeat with the remaining ice cream, graham cracker mixture, and toppings.
Freeze:
Cover the container with parchment paper or plastic wrap pressed directly onto the surface to prevent ice crystals from forming.
Freeze for at least 4 hours, or until firm.
Serve:
Scoop and enjoy! Garnish with extra graham cracker crumbs, fresh berries, or a drizzle of caramel or fruit compote.
Tips:
For a stronger cheesecake flavor, you can add 1-2 tablespoons of sour cream to the ice cream base.
If you don’t have an ice cream maker, you can pour the mixture into a shallow dish and freeze it, stirring every 30 minutes until it reaches the desired consistency.
Customize your ice cream with different toppings, such as blueberry compote, chocolate chips, or crushed cookies.
