Homemade Brownie Batter Ice Cream
Ingredients:
For the Ice Cream Base:
- 1½ cups (375ml) heavy cream
- 1½ cups (375ml) whole milk
- ¾ cup (150g) granulated sugar
- ½ cup (50g) unsweetened cocoa powder
- 4 large egg yolks
- 1 tsp vanilla extract
- Pinch of salt
For the Edible Brownie Batter Swirl:
- ½ cup (60g) all-purpose flour (heat-treated*)
- ¼ cup (50g) unsalted butter, melted
- ¼ cup (50g) brown sugar
- 2 tbsp granulated sugar
- 2 tbsp cocoa powder
- 2 tbsp whole milk
- ½ tsp vanilla extract
- Pinch of salt
For the Mix-Ins:
- 1 cup (150g) brownie chunks (store-bought or homemade)
- ¼ cup (60ml) chocolate syrup (optional)
Instructions:
Step 1: Prepare the Chocolate Ice Cream Base
- In a medium saucepan, whisk together the heavy cream, whole milk, sugar, and cocoa powder. Heat over medium heat, stirring occasionally, until the mixture is hot but not boiling.
- In a separate bowl, whisk the egg yolks until pale and creamy.
- Slowly pour ½ cup of the hot chocolate mixture into the yolks, whisking constantly to temper them.
- Gradually pour the tempered yolks back into the saucepan, stirring continuously over low heat. Cook for 5–7 minutes until slightly thickened.
- Remove from heat, stir in vanilla extract and a pinch of salt.
- Strain the custard through a fine sieve for a smooth texture, then let it cool to room temperature.
- Cover and refrigerate for at least 4 hours or overnight.
Step 2: Make the Edible Brownie Batter Swirl
- Heat-treat the flour by microwaving it in a bowl for 30–60 seconds or baking at 350°F (175°C) for 5 minutes to kill bacteria. Let cool.
- In a mixing bowl, stir together melted butter, brown sugar, granulated sugar, and cocoa powder.
- Add milk, vanilla extract, and salt, then mix until smooth.
