This Hazelnut Ice Cream is rich, nutty, and irresistibly creamy, with a deep roasted hazelnut flavor that pairs perfectly with chocolate, caramel, or coffee.


Ingredients

For the Hazelnut Paste (Optional, but Recommended):

  • 1 cup (150g) hazelnuts (toasted and skinned)
  • 2 tbsp powdered sugar
  • 1 tbsp vegetable oil (optional, for a smoother texture)

For the Ice Cream Base:

  • 1½ cups (375ml) heavy cream
  • 1½ cups (375ml) whole milk
  • ¾ cup (150g) granulated sugar
  • 4 large egg yolks
  • ½ cup (120ml) hazelnut paste (or store-bought hazelnut spread)
  • 1 tsp vanilla extract
  • ½ tsp salt

Optional Add-Ins:

  • ½ cup (75g) chopped toasted hazelnuts (for extra crunch)
  • ½ cup (75g) dark chocolate chunks or Nutella swirls

Instructions

Step 1: Make the Hazelnut Paste (Skip if Using Store-Bought)

  1. Toast hazelnuts at 350°F (175°C) for 10–12 minutes, then rub them in a towel to remove skins.
  2. Blend in a food processor with powdered sugar until smooth. Add vegetable oil if needed for a creamy texture.

Step 2: Make the Ice Cream Base

  1. In a saucepan, heat heavy cream, whole milk, and sugar over medium heat, stirring until warm (do not boil).
  2. In a separate bowl, whisk the egg yolks until pale and creamy.
  3. Slowly pour ½ cup of the warm milk mixture into the yolks while whisking to temper them.
  4. Gradually pour the tempered yolks back into the saucepan, stirring continuously over low heat for 5–7 minutes, until slightly thickened (it should coat the back of a spoon).
  5. Remove from heat and whisk in hazelnut paste, vanilla extract, and salt.
  6. Strain through a fine sieve for a silky texture. Let cool to room temperature, then refrigerate for at least 4 hours or overnight.

Step 3: Churn the Ice Cream

  1. Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions (20–25 minutes).

Step 4: Add Mix-Ins & Freeze

  1. In the last 5 minutes of churning, fold in any chopped hazelnuts or chocolate chunks (optional).
  2. Transfer to an airtight container and swirl in Nutella or extra hazelnut paste for added richness.
  3. Freeze for 4–6 hours until firm.

Step 5: Serve & Enjoy

  1. Scoop into bowls or cones, drizzle with chocolate sauce, and top with crushed hazelnuts for extra crunch!
