Homemade Peanut Butter Cup Ice Cream

Ingredients:

  • 1½ cups (375ml) heavy cream
  • 1½ cups (375ml) whole milk
  • ¾ cup (150g) granulated sugar
  • ½ cup (125g) creamy peanut butter
  • 4 large egg yolks
  • 1 tsp vanilla extract
  • Pinch of salt
For the Mix-Ins:
  • ¾ cup (150g) mini peanut butter cups (chopped)
  • ¼ cup (60ml) melted peanut butter (for swirling)
  • ¼ cup (60ml) melted chocolate (optional)

Instructions:

Step 1: Make the Ice Cream Base

  1. In a saucepan over medium heat, whisk together the heavy cream, whole milk, and sugar until sugar dissolves.
  2. Add the peanut butter and stir until fully melted and smooth.
  3. In a separate bowl, whisk the egg yolks until pale and creamy.
  4. Slowly pour ½ cup of the warm peanut butter mixture into the yolks, whisking constantly to temper them.
  5. Gradually add the tempered yolks back into the saucepan, stirring continuously. Cook over low heat for 5–7 minutes until the mixture thickens slightly.
  6. Remove from heat, stir in vanilla extract and a pinch of salt.
  7. Strain through a fine sieve for a smooth texture. Let cool to room temperature, then refrigerate for at least 4 hours or overnight.

Step 2: Churn the Ice Cream

  1. Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions (20–25 minutes).

Step 3: Add Peanut Butter Cups & Swirls

  1. In the last 5 minutes of churning, add the chopped peanut butter cups.
  2. Layer the churned ice cream into an airtight container, drizzling melted peanut butter and melted chocolate between layers for a swirl effect.
