Homemade Honeycomb Ice Cream 🍯🍨


A rich, creamy vanilla ice cream swirled with crispy, golden honeycomb pieces, creating the perfect balance of smooth and crunchy textures. This Honeycomb Ice Cream is sweet, buttery, and irresistibly delicious!


Ingredients

For the Honeycomb Candy:

  • ½ cup (100g) granulated sugar
  • ¼ cup (60ml) honey or golden syrup
  • 1 tsp baking soda

For the Ice Cream Base:

  • 1½ cups (375ml) heavy cream
  • 1½ cups (375ml) whole milk
  • ¾ cup (150g) granulated sugar
  • 4 large egg yolks
  • 1 tsp vanilla extract
  • ½ tsp salt

Instructions

Step 1: Make the Honeycomb Candy

  1. Line a baking sheet with parchment paper.
  2. In a saucepan over medium heat, combine sugar and honey. Stir gently until melted, then stop stirring and let it bubble for 3–4 minutes, until it turns a deep golden color.
  3. Remove from heat and quickly whisk in baking soda (it will foam up).
  4. Immediately pour onto the prepared baking sheet and let it cool completely.
  5. Once hardened, break it into small chunks.

Step 2: Make the Ice Cream Base

  1. In a saucepan, heat heavy cream, whole milk, and sugar over medium heat, stirring until warm (do not boil).
  2. In a separate bowl, whisk the egg yolks until pale and creamy.
  3. Slowly pour ½ cup of the warm milk mixture into the yolks while whisking to temper them.
  4. Gradually pour the tempered yolks back into the saucepan, stirring continuously over low heat for 5–7 minutes, until slightly thickened (it should coat the back of a spoon).
  5. Remove from heat and stir in vanilla extract and salt.
  6. Strain through a fine sieve for a silky texture. Let cool to room temperature, then refrigerate for at least 4 hours or overnight.

Step 3: Churn the Ice Cream

  1. Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions (20–25 minutes).

Step 4: Add Honeycomb Pieces

  1. In the last 5 minutes of churning, fold in honeycomb candy pieces.
  2. Transfer the churned ice cream into a container, layering in extra honeycomb chunks for extra crunch.

Step 5: Freeze & Serve

  1. Cover and freeze for 4–6 hours until firm.
  2. Scoop into bowls or cones, drizzle with honey, and enjoy!
