Ingredients:

  • For the wings:

    • 2 lbs chicken wings, split into drumettes and flats
    • 1 tbsp baking powder (not baking soda)
    • 1 tsp salt
    • 1 tsp garlic powder
    • ½ tsp black pepper
    • ½ tsp paprika
  • For the sauce:

    • ½ cup hot sauce (e.g., Frank’s RedHot)
    • 4 tbsp unsalted butter
    • 2 tbsp honey
    • 1 tbsp minced garlic
    • ¼ cup grated Parmesan cheese
  • For garnish:

    • 2 tbsp fresh parsley, chopped
    • Extra grated Parmesan

Instructions:

  1. Prepare the wings:

    • Preheat your oven to 425°F (220°C). Line a baking sheet with foil and place a wire rack on top.
    • Pat the chicken wings dry with paper towels to remove excess moisture (this helps them get crispy).
    • In a large bowl, toss the wings with baking powder, salt, garlic powder, black pepper, and paprika.
  2. Bake the wings:

    • Arrange the wings on the wire rack in a single layer.
    • Bake for 40-45 minutes, flipping halfway through, until the wings are golden brown and crispy.
  3. Make the sauce:

    • In a small saucepan, melt the butter over medium heat. Add the minced garlic and cook for 1 minute until fragrant.
    • Stir in the hot sauce, honey, and Parmesan cheese. Mix well and simmer for 2-3 minutes until slightly thickened.
  4. Toss the wings:

    • Transfer the baked wings to a large bowl. Pour the sauce over the wings and toss until evenly coated.
  5. Serve:

    • Arrange the wings on a serving platter. Garnish with fresh parsley and extra Parmesan cheese. Serve hot with celery sticks and your favorite dipping sauce (e.g., ranch or blue cheese).

Optional Variations:

  • Spicy Kick: Add 1 tsp cayenne pepper or a dash of sriracha to the sauce for extra heat.
  • Sweet Twist: Mix in 1 tbsp brown sugar with the sauce for a sweet and spicy balance.
  • Air Fryer Option: Cook the wings in an air fryer at 400°F (200°C) for 20-25 minutes, shaking halfway through.
