Ingredients:

  • For the hot dogs:

    • 4 beef or pork hot dog sausages
    • 4 hot dog buns, toasted
  • For the Tex-Mex toppings:

    • ½ cup shredded cheddar or Monterey Jack cheese
    • ½ cup canned black beans, rinsed and drained
    • ½ cup fresh salsa (store-bought or homemade)
    • 1 avocado, diced
    • 2 tbsp sour cream or Greek yogurt
    • 1 jalapeño, thinly sliced (optional)
    • 2 tbsp chopped fresh cilantro
    • 1 lime, cut into wedges

Instructions:

  1. Cook the hot dogs:

    • Grill: Preheat your grill to medium heat. Grill the sausages for 5-7 minutes, turning occasionally, until heated through and slightly charred.
    • Stovetop: Heat a skillet over medium heat. Cook the sausages, turning occasionally, for about 5 minutes.
  2. Prepare the buns:

    • Lightly toast the hot dog buns on the grill or under the broiler for 1-2 minutes until golden.
  3. Assemble the hot dogs:

    • Place a cooked hot dog in each toasted bun.
    • Sprinkle shredded cheese over the hot dog while it’s still warm so it melts slightly.
  4. Add the Tex-Mex toppings:

    • Spoon black beans over the cheese.
    • Add a generous dollop of fresh salsa.
    • Top with diced avocado and a drizzle of sour cream or Greek yogurt.
