Aromatic Lamb & Apricot Plov 🍛🐑🌿
Ingredients:
For the Rice & Base:
- 2 cups basmati or long-grain rice
- 3 cups water or beef broth
- 2 tbsp vegetable oil or lamb fat
- 1 large onion, finely chopped
- 2 medium carrots, julienned
- 3 cloves garlic, minced
- 1 tsp cumin seeds
- 1 tsp ground coriander
- 1/2 tsp paprika
- 1/2 tsp turmeric (for color & subtle earthiness)
- 1/2 tsp black pepper
- Salt to taste
For the Meat & Flavor Boosters:
- 1 lb lamb or beef, cut into bite-sized pieces
- 1/3 cup dried apricots, chopped (for subtle sweetness)
- 1/4 cup raisins or barberries (optional)
- 1/2 tsp chili flakes (optional, for mild heat)
- 2-3 whole garlic cloves (to steam with the rice)
- 1 bay leaf
For Garnish:
- Fresh cilantro or parsley, chopped
- Toasted almonds or pine nuts (optional)
Instructions:
Prepare the Rice:
- Rinse the rice under cold water until the water runs clear. Soak it in warm water for 15-20 minutes, then drain.
Sauté the Aromatics & Meat:
- Heat oil in a heavy-bottomed pot or Dutch oven over medium heat.
- Add chopped onions and sauté until golden brown.
- Stir in the lamb (or beef) and cook until browned on all sides.
- Add carrots, minced garlic, cumin, coriander, paprika, turmeric, black pepper, and salt. Stir and cook for 5 more minutes.
Build the Plov Base:
- Toss in the apricots, raisins (if using), and whole garlic cloves. Mix well.
- Spread the soaked rice evenly over the meat and vegetables without stirring.
- Carefully pour the broth or water over the rice, making sure not to disturb the layers.
Steam & Cook the Rice:
- Add a bay leaf on top, cover, and bring to a gentle simmer.
- Cook on low heat for about 20-25 minutes, or until the rice has absorbed the liquid.
- Once cooked, turn off the heat and let the plov rest, covered, for another 10 minutes.
Fluff & Serve:
- Gently fluff the rice with a fork, mixing in the layers without breaking the grains.
- Garnish with fresh cilantro and toasted nuts for extra texture.
