Aromatic Lamb & Apricot Plov 🍛🐑🌿

Ingredients:

  • For the Rice & Base:

    • 2 cups basmati or long-grain rice
    • 3 cups water or beef broth
    • 2 tbsp vegetable oil or lamb fat
    • 1 large onion, finely chopped
    • 2 medium carrots, julienned
    • 3 cloves garlic, minced
    • 1 tsp cumin seeds
    • 1 tsp ground coriander
    • 1/2 tsp paprika
    • 1/2 tsp turmeric (for color & subtle earthiness)
    • 1/2 tsp black pepper
    • Salt to taste
  • For the Meat & Flavor Boosters:

    • 1 lb lamb or beef, cut into bite-sized pieces
    • 1/3 cup dried apricots, chopped (for subtle sweetness)
    • 1/4 cup raisins or barberries (optional)
    • 1/2 tsp chili flakes (optional, for mild heat)
    • 2-3 whole garlic cloves (to steam with the rice)
    • 1 bay leaf
  • For Garnish:

    • Fresh cilantro or parsley, chopped
    • Toasted almonds or pine nuts (optional)

Instructions:

  1. Prepare the Rice:

    • Rinse the rice under cold water until the water runs clear. Soak it in warm water for 15-20 minutes, then drain.
  2. Sauté the Aromatics & Meat:

    • Heat oil in a heavy-bottomed pot or Dutch oven over medium heat.
    • Add chopped onions and sauté until golden brown.
    • Stir in the lamb (or beef) and cook until browned on all sides.
    • Add carrots, minced garlic, cumin, coriander, paprika, turmeric, black pepper, and salt. Stir and cook for 5 more minutes.
  3. Build the Plov Base:

    • Toss in the apricots, raisins (if using), and whole garlic cloves. Mix well.
    • Spread the soaked rice evenly over the meat and vegetables without stirring.
    • Carefully pour the broth or water over the rice, making sure not to disturb the layers.
  4. Steam & Cook the Rice:

    • Add a bay leaf on top, cover, and bring to a gentle simmer.
    • Cook on low heat for about 20-25 minutes, or until the rice has absorbed the liquid.
    • Once cooked, turn off the heat and let the plov rest, covered, for another 10 minutes.
  5. Fluff & Serve:

    • Gently fluff the rice with a fork, mixing in the layers without breaking the grains.
    • Garnish with fresh cilantro and toasted nuts for extra texture.
  6. Enjoy!

    • Serve hot with a side of yogurt, fresh salad, or pickled vegetables for a balanced meal.

Optional Variations:

  • Uzbek-Style: Use bone-in lamb for a richer broth and add chickpeas for a heartier dish.
  • Vegetarian Twist: Substitute meat with mushrooms and add chickpeas or lentils for protein.
