Homemade Mocha Ice Cream

Ingredients:

  • 1½ cups (375ml) heavy cream
  • 1½ cups (375ml) whole milk
  • ¾ cup (150g) granulated sugar
  • ¼ cup (25g) unsweetened cocoa powder
  • 2 tbsp instant espresso powder (or finely ground coffee)
  • 4 large egg yolks
  • ½ cup (90g) dark chocolate, finely chopped
  • 1 tsp vanilla extract
  • Pinch of salt
Optional Mix-Ins:
  • ½ cup (75g) chocolate-covered espresso beans (chopped)
  • ¼ cup (60ml) chocolate syrup (for drizzling)

Instructions:

Step 1: Make the Mocha Ice Cream Base

  1. In a medium saucepan, whisk together heavy cream, whole milk, sugar, cocoa powder, and espresso powder. Heat over medium heat, stirring occasionally, until hot but not boiling.
  2. In a separate bowl, whisk the egg yolks until pale and creamy.
  3. Slowly pour ½ cup of the hot mixture into the yolks, whisking constantly to temper them.
  4. Gradually pour the tempered yolks back into the saucepan, stirring continuously.
  5. Cook over low heat for 5–7 minutes, stirring, until slightly thickened (it should coat the back of a spoon).
  6. Remove from heat and stir in chopped dark chocolate, vanilla extract, and salt. Mix until smooth.
  7. Strain the custard through a fine sieve for a silky texture, then let it cool to room temperature.
  8. Cover and refrigerate for at least 4 hours or overnight.

Step 2: Churn the Ice Cream

  1. Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions (about 20–25 minutes).

Step 3: Add Mix-Ins & Swirls

  1. In the last 5 minutes of churning, fold in chopped chocolate-covered espresso beans for added crunch.
  2. Layer the churned ice cream into an airtight container, drizzling chocolate syrup between layers for a mocha swirl.

Step 4: Freeze & Serve

  1. Cover and freeze for 4–6 hours until firm.
