Homemade Mango Ice Cream
Ingredients:
- 3 large ripe mangoes (about 2 cups of mango puree)
- 1 cup (250ml) heavy cream
- 1 cup (250ml) whole milk
- ¾ cup (150g) granulated sugar
- 2 tbsp fresh lime juice (optional, enhances mango flavor)
- 1 tsp vanilla extract
- Pinch of salt
Instructions:
Step 1: Prepare the Mango Puree
- Peel the mangoes and remove the flesh from the pit.
- Blend the mango flesh in a blender or food processor until smooth. Strain the puree through a fine sieve to remove any fibers (optional but recommended for extra smoothness).
- Add the lime juice (if using) and stir to combine. Set aside.
Step 2: Prepare the Ice Cream Base
- In a medium saucepan, combine the heavy cream, milk, sugar, and a pinch of salt. Heat over medium heat, stirring occasionally, until the sugar is fully dissolved and the mixture is hot but not boiling.
- Remove the mixture from heat and let it cool slightly.
Step 3: Combine Mango and Base
- Once the cream mixture has cooled, stir in the mango puree and vanilla extract. Mix well until fully combined.
- Cover and refrigerate the mixture for at least 4 hours or overnight to chill thoroughly.
Step 4: Churn the Ice Cream
- Pour the chilled mango mixture into an ice cream maker and churn according to the manufacturer’s instructions (usually 20–25 minutes).
Step 5: Freeze and Serve
- Transfer the churned ice cream to an airtight container and freeze for 4–6 hours until firm.
- Scoop and serve, optionally garnished with fresh mango slices or a sprig of mint.
