Homemade Fajitas (Chicken, Steak, or Shrimp)
Ingredients:
For the Marinade:
- ¼ cup (60ml) lime juice (about 2 limes)
- ¼ cup (60ml) olive oil
- 2 tbsp soy sauce or Worcestershire sauce
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp smoked paprika
- 1 tsp cumin
- ½ tsp oregano
- ½ tsp salt
- ½ tsp black pepper
- ¼ tsp cayenne pepper (optional, for heat)
For the Fajitas:
- 1½ lbs (680g) chicken breast, steak (flank/skirt), or shrimp
- 1 tbsp olive oil (for cooking)
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 large onion, sliced
- 8 small flour or corn tortillas
- Fresh cilantro, for garnish

Instructions:
Step 1: Marinate the Protein
- In a bowl, whisk together all marinade ingredients.
- Place the chicken, steak, or shrimp in a large resealable bag or bowl. Pour the marinade over and mix well.
- Cover and refrigerate for at least 30 minutes (or up to 4 hours for deeper flavor).
Step 2: Cook the Protein
- Heat a large skillet or grill pan over medium-high heat and add 1 tbsp of olive oil.
- Remove the meat from the marinade and shake off excess liquid.
- Chicken: Cook for 6-7 minutes per side until golden brown and cooked through (internal temp: 165°F/74°C).
- Steak: Cook for 3-5 minutes per side (depending on thickness) for medium-rare to medium (internal temp: 130-135°F/55-57°C). Let it rest before slicing.
- Shrimp: Cook for 2 minutes per side until pink and opaque.
Step 3: Sauté the Vegetables
- In the same skillet, add sliced bell peppers and onions. Cook for 5-6 minutes, stirring occasionally, until softened and slightly charred.
Step 4: Assemble the Fajitas
- Slice the chicken or steak into thin strips.
- Warm the tortillas in a dry skillet for about 30 seconds per side.
- Fill each tortilla with the cooked meat and sautéed veggies.
- Top with fresh cilantro and any desired toppings.
