Homemade Fajitas (Chicken, Steak, or Shrimp)

Ingredients:

For the Marinade:
  • ¼ cup (60ml) lime juice (about 2 limes)
  • ¼ cup (60ml) olive oil
  • 2 tbsp soy sauce or Worcestershire sauce
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • ½ tsp oregano
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ tsp cayenne pepper (optional, for heat)
For the Fajitas:
  • 1½ lbs (680g) chicken breast, steak (flank/skirt), or shrimp
  • 1 tbsp olive oil (for cooking)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 large onion, sliced
  • 8 small flour or corn tortillas
  • Fresh cilantro, for garnish

Instructions:

Step 1: Marinate the Protein

  1. In a bowl, whisk together all marinade ingredients.
  2. Place the chicken, steak, or shrimp in a large resealable bag or bowl. Pour the marinade over and mix well.
  3. Cover and refrigerate for at least 30 minutes (or up to 4 hours for deeper flavor).

Step 2: Cook the Protein

  1. Heat a large skillet or grill pan over medium-high heat and add 1 tbsp of olive oil.
  2. Remove the meat from the marinade and shake off excess liquid.
    • Chicken: Cook for 6-7 minutes per side until golden brown and cooked through (internal temp: 165°F/74°C).
    • Steak: Cook for 3-5 minutes per side (depending on thickness) for medium-rare to medium (internal temp: 130-135°F/55-57°C). Let it rest before slicing.
    • Shrimp: Cook for 2 minutes per side until pink and opaque.

Step 3: Sauté the Vegetables

  1. In the same skillet, add sliced bell peppers and onions. Cook for 5-6 minutes, stirring occasionally, until softened and slightly charred.

Step 4: Assemble the Fajitas

  1. Slice the chicken or steak into thin strips.
  2. Warm the tortillas in a dry skillet for about 30 seconds per side.
  3. Fill each tortilla with the cooked meat and sautéed veggies.
  4. Top with fresh cilantro and any desired toppings.
