Hearty Beef Noodle Soup with Vegetables

Ingredients
For the Broth:
- 6 cups beef broth (or homemade bone broth)
- 2 cups water
- 2 tbsp soy sauce
- 1 tbsp oyster sauce (for depth of flavor)
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
- 1-inch ginger, sliced
- 4 cloves garlic, minced
- 1 tbsp sugar (optional, to balance flavors)
- 1 tsp white pepper
- ½ tsp five-spice powder
- 1 tsp chili flakes (optional for spice)
For the Beef:
- 1 lb beef shank or brisket, cut into chunks
- 1 tbsp soy sauce (for marinating)
- 1 tsp cornstarch (to keep meat tender)
- 1 tbsp vegetable oil (for searing)
For the Vegetables:
- 1 cup bok choy (or napa cabbage), chopped
- 1 medium carrot, sliced
- ½ cup shiitake mushrooms, sliced
- 1 onion, thinly sliced
- 2 tbsp chopped green onions (for garnish)
For the Noodles:
- 8 oz egg noodles (or rice noodles)

- Cilantro (for freshness)
- Chili oil (for spice)
- Sesame seeds
- Fried shallots
Instructions
1. Prepare the Beef:
- Toss beef chunks with soy sauce and cornstarch. Let marinate for 15 minutes.
- Heat vegetable oil in a large pot over medium-high heat.
- Sear beef until browned on all sides, about 5 minutes. Remove and set aside.
2. Make the Broth:
- In the same pot, add ginger, garlic, and onion, sautéing until fragrant.
- Pour in beef broth, water, soy sauce, oyster sauce, rice vinegar, sesame oil, sugar, white pepper, five-spice powder, and chili flakes.
- Return the seared beef to the pot.
- Simmer on low heat for 1.5–2 hours until beef is tender.
3. Cook the Vegetables & Noodles:
- Add carrots, mushrooms, and bok choy to the pot. Simmer for another 5 minutes until tender.
- Cook noodles separately according to package instructions.
4. Serve & Garnish:
- Divide the cooked noodles into bowls.
- Ladle the broth, beef, and vegetables over the noodles.
- Garnish with green onions, cilantro, and chili oil.
