Hearty Beef Noodle Soup with Vegetables

Ingredients

For the Broth:

  • 6 cups beef broth (or homemade bone broth)
  • 2 cups water
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce (for depth of flavor)
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1-inch ginger, sliced
  • 4 cloves garlic, minced
  • 1 tbsp sugar (optional, to balance flavors)
  • 1 tsp white pepper
  • ½ tsp five-spice powder
  • 1 tsp chili flakes (optional for spice)

For the Beef:

  • 1 lb beef shank or brisket, cut into chunks
  • 1 tbsp soy sauce (for marinating)
  • 1 tsp cornstarch (to keep meat tender)
  • 1 tbsp vegetable oil (for searing)

For the Vegetables:

  • 1 cup bok choy (or napa cabbage), chopped
  • 1 medium carrot, sliced
  • ½ cup shiitake mushrooms, sliced
  • 1 onion, thinly sliced
  • 2 tbsp chopped green onions (for garnish)

For the Noodles:

  • 8 oz egg noodles (or rice noodles)

Optional Garnishes:

  • Cilantro (for freshness)
  • Chili oil (for spice)
  • Sesame seeds
  • Fried shallots

Instructions

1. Prepare the Beef:

  • Toss beef chunks with soy sauce and cornstarch. Let marinate for 15 minutes.
  • Heat vegetable oil in a large pot over medium-high heat.
  • Sear beef until browned on all sides, about 5 minutes. Remove and set aside.

2. Make the Broth:

  • In the same pot, add ginger, garlic, and onion, sautéing until fragrant.
  • Pour in beef broth, water, soy sauce, oyster sauce, rice vinegar, sesame oil, sugar, white pepper, five-spice powder, and chili flakes.
  • Return the seared beef to the pot.
  • Simmer on low heat for 1.5–2 hours until beef is tender.

3. Cook the Vegetables & Noodles:

  • Add carrots, mushrooms, and bok choy to the pot. Simmer for another 5 minutes until tender.
  • Cook noodles separately according to package instructions.

4. Serve & Garnish:

  • Divide the cooked noodles into bowls.
  • Ladle the broth, beef, and vegetables over the noodles.
  • Garnish with green onions, cilantro, and chili oil.
