Rich & Hearty Duck Blood Soup with Vegetables

(A deeply flavorful and nourishing soup featuring tender duck blood, hearty meat, and fresh vegetables in a rich broth.)


Ingredients

For the Broth:

  • 6 cups chicken broth (or duck broth for deeper flavor)
  • 2 cups water
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp Shaoxing wine (optional, for aroma)
  • 1 tsp sesame oil
  • 1-inch ginger, sliced
  • 3 cloves garlic, minced
  • ½ tsp white pepper
  • ½ tsp five-spice powder
  • 1 tsp sugar (optional, to balance flavors)

For the Meat & Blood:

  • ½ lb duck blood, cubed (can be substituted with pork blood)
  • ½ lb duck breast or pork, thinly sliced
  • 1 tbsp soy sauce (for marinating meat)
  • 1 tsp cornstarch (to keep meat tender)
  • 1 tbsp vegetable oil (for searing)

For the Vegetables:

  • 1 cup bok choy (or napa cabbage), chopped
  • ½ cup shiitake mushrooms, sliced
  • 1 medium carrot, julienned
  • ½ cup bean sprouts
  • 2 tbsp chopped green onions (for garnish)

Optional Garnishes:

  • Cilantro (for freshness)
  • Chili oil (for spice)
  • Sesame seeds
  • Fried garlic or shallots

Instructions

1. Prepare the Meat & Blood:

  • Toss duck breast (or pork slices) with soy sauce and cornstarch. Let marinate for 15 minutes.
  • Heat vegetable oil in a large pot over medium-high heat.
  • Sear the meat until browned, about 5 minutes. Remove and set aside.
  • Add duck blood cubes and lightly sear for 2 minutes. Remove and set aside.

2. Make the Broth:

  • In the same pot, add ginger, garlic, and five-spice powder, sautéing until fragrant.
  • Pour in chicken broth, water, soy sauce, oyster sauce, Shaoxing wine, sesame oil, sugar, and white pepper.
  • Bring to a simmer and let cook for 10 minutes.

3. Cook the Vegetables & Meat:

  • Return the seared meat and duck blood to the pot.
  • Add carrots, mushrooms, bean sprouts, and bok choy.
  • Let simmer for another 5–7 minutes until the vegetables are tender.

4. Serve & Garnish:

  • Ladle the broth, meat, and vegetables into bowls.
  • Garnish with green onions, cilantro, and fried garlic.
  • Drizzle with chili oil for extra heat.
