Ingredients:

  • For the gazpacho:

    • 4 cups watermelon, cubed and deseeded
    • 3 large ripe tomatoes, chopped
    • 1 medium cucumber, peeled and chopped
    • 1 red bell pepper, chopped
    • 1 small red onion, chopped
    • 2 cloves garlic
    • 3 tbsp red wine vinegar
    • 3 tbsp olive oil
    • ½ cup fresh basil leaves
    • Salt and freshly cracked black pepper to taste
  • For garnish:

    • Diced watermelon
    • Small basil leaves
    • Crumbled feta cheese (optional)
    • Drizzle of olive oil

Instructions:

  1. Prepare the ingredients:

    • Place the watermelon, tomatoes, cucumber, red bell pepper, red onion, and garlic in a blender or food processor.
  2. Blend the gazpacho:

    • Add red wine vinegar, olive oil, basil leaves, salt, and pepper to the blender. Blend until smooth. If you prefer a chunkier texture, pulse until desired consistency is reached.
  3. Chill:

    • Transfer the gazpacho to a large bowl or pitcher. Cover and refrigerate for at least 2 hours to allow the flavors to meld.
  4. Adjust seasoning:

    • Before serving, taste and adjust seasoning with additional salt, pepper, or vinegar if needed.
  5. Serve:

    • Pour the chilled gazpacho into bowls or glasses. Garnish with diced watermelon, small basil leaves, crumbled feta (if using), and a drizzle of olive oil.

Optional Variations:

  • Add a touch of spice with a pinch of cayenne pepper or a diced jalapeño.
  • Substitute watermelon with cantaloupe or honeydew for a different fruity flavor.
