Ingredients:
For the gazpacho:
- 4 cups watermelon, cubed and deseeded
- 3 large ripe tomatoes, chopped
- 1 medium cucumber, peeled and chopped
- 1 red bell pepper, chopped
- 1 small red onion, chopped
- 2 cloves garlic
- 3 tbsp red wine vinegar
- 3 tbsp olive oil
- ½ cup fresh basil leaves
- Salt and freshly cracked black pepper to taste
For garnish:
- Diced watermelon
- Small basil leaves
- Crumbled feta cheese (optional)
- Drizzle of olive oil
Instructions:
Prepare the ingredients:
- Place the watermelon, tomatoes, cucumber, red bell pepper, red onion, and garlic in a blender or food processor.
Blend the gazpacho:
- Add red wine vinegar, olive oil, basil leaves, salt, and pepper to the blender. Blend until smooth. If you prefer a chunkier texture, pulse until desired consistency is reached.
Chill:
- Transfer the gazpacho to a large bowl or pitcher. Cover and refrigerate for at least 2 hours to allow the flavors to meld.
Adjust seasoning:
- Before serving, taste and adjust seasoning with additional salt, pepper, or vinegar if needed.
Serve:
- Pour the chilled gazpacho into bowls or glasses. Garnish with diced watermelon, small basil leaves, crumbled feta (if using), and a drizzle of olive oil.
Optional Variations:
- Add a touch of spice with a pinch of cayenne pepper or a diced jalapeño.
