Ingredients:

  • For the churros:

    • 1 cup water
    • 2 tbsp unsalted butter
    • 1 tbsp granulated sugar
    • ½ tsp salt
    • 1 cup all-purpose flour
    • 1 large egg
    • 1 tsp vanilla extract
  • For the filling:

    • 100g dark chocolate, finely chopped
    • ¼ cup heavy cream
  • For frying:

    • Vegetable oil, for deep frying
  • For the coating:

    • ½ cup granulated sugar
    • 1 tsp ground cinnamon
  • For dipping (optional):

    • Chocolate sauce or caramel sauce

Instructions:

  1. Prepare the filling:

    • Heat heavy cream in a small saucepan until steaming but not boiling.
    • Pour over chopped dark chocolate in a heatproof bowl. Let sit for 1 minute, then stir until smooth.
    • Transfer the chocolate mixture to a piping bag and refrigerate until firm enough to pipe, about 30 minutes.
  2. Make the churro dough:

    • In a medium saucepan, combine water, butter, sugar, and salt. Bring to a boil.
    • Reduce heat to low and stir in flour all at once. Mix vigorously until the dough forms a ball and pulls away from the sides of the pan. Cook for 1-2 minutes, stirring constantly.
    • Transfer the dough to a mixing bowl and let cool slightly. Add the egg and vanilla extract, mixing until smooth and glossy.
  3. Prepare for frying:

    • Heat vegetable oil in a deep skillet or pot to 190°C (375°F).
  4. Pipe and fry:

    • Transfer the dough to a piping bag fitted with a large star tip. Pipe 6-inch strips of dough directly into the hot oil, cutting with scissors. Fry 2-3 churros at a time, turning occasionally, until golden brown, about 3-4 minutes.
    • Remove with a slotted spoon and drain on paper towels.
  5. Coat the churros:

    • Combine sugar and cinnamon in a shallow dish. Roll the warm churros in the mixture to coat evenly.
  6. Stuff the churros:

    • Once the churros are cool enough to handle, use a chopstick or skewer to create a hollow center. Pipe the chocolate filling into each churro.
  7. Serve:

    • Serve warm with optional chocolate or caramel dipping sauce.

Optional Variations:

  • Replace the chocolate filling with dulce de leche or Nutella.
  • Add orange zest or espresso powder to the chocolate filling for a unique flavor twist.
  • Make mini churros for bite-sized treats.
