Ingredients:

  • For the tapas base:

    • 200g large shrimp, peeled and deveined
    • 150g Spanish chorizo, sliced into thin rounds
    • 4 cloves garlic, thinly sliced
    • 2 tbsp olive oil
    • 1 tsp smoked paprika
    • ½ tsp red chili flakes (adjust to taste)
    • Juice of 1 lemon
  • For garnish:

    • Fresh parsley, chopped
    • Lemon wedges
    • Crusty bread slices for serving

Instructions:

  1. Prepare the shrimp and chorizo:

    • Pat the shrimp dry with paper towels and season lightly with salt.
  2. Cook the chorizo:

    • Heat 1 tbsp olive oil in a large skillet over medium heat. Add chorizo slices and cook for 2-3 minutes until browned and crispy. Remove with a slotted spoon and set aside.
  3. Sauté the garlic and spices:

    • Add the remaining 1 tbsp olive oil to the same skillet. Toss in the sliced garlic and cook for 1 minute until fragrant (do not let it burn).
    • Add smoked paprika and chili flakes, stirring quickly to combine.
  4. Cook the shrimp:

    • Add the shrimp to the skillet, stirring to coat in the garlic and spices. Cook for 2-3 minutes until the shrimp turn pink and are cooked through.
  5. Combine and flavor:

    • Return the crispy chorizo to the skillet. Stir in the lemon juice and cook for an additional minute to combine flavors.
  6. Garnish and serve:

    • Transfer the shrimp and chorizo mixture to a serving dish. Garnish with chopped parsley and serve with lemon wedges and crusty bread slices for dipping.

Optional Variations:

  • Add a splash of dry white wine or sherry for extra depth.
  • Substitute shrimp with squid rings or scallops for a seafood variation.
  • For a vegetarian option, replace chorizo with roasted red peppers and mushrooms.
