Vanilla Bean Lavender Shortbread Cookies

Ingredients:

  • 2 cups (250g) all-purpose flour
  • ½ cup (100g) granulated sugar
  • 1 cup (230g) unsalted butter, softened
  • 1 tsp pure vanilla extract
  • Seeds from 1 vanilla bean or 1 tsp vanilla bean paste
  • 1 tbsp dried culinary lavender (finely chopped)
  • ¼ tsp salt
  • Optional: 1 tbsp milk (if dough is too crumbly)
  • 2 tbsp granulated sugar (for sprinkling on top)

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 325°F (160°C).
    • Line a baking sheet with parchment paper.
  2. Prepare the Dough:

    • In a large bowl, beat the softened butter and sugar together until light and fluffy using a hand or stand mixer.
    • Mix in the vanilla extract and vanilla bean seeds (or paste).
    • Add the finely chopped lavender and salt, stirring until well combined.
    • Gradually add the flour, mixing just until the dough comes together. If the dough is too crumbly, add 1 tbsp of milk to bind it.
  3. Shape the Cookies:

    • Turn the dough out onto a lightly floured surface. Roll it into a log or flatten it into a disc, wrap it in plastic wrap, and refrigerate for 30 minutes to firm up.
    • Roll the dough to about ¼-inch (6mm) thickness and cut into desired shapes using cookie cutters.
    • Alternatively, slice the chilled log into ¼-inch thick rounds.
  4. Bake:

    • Place the cookies on the prepared baking sheet, spacing them about 1 inch apart.
    • Sprinkle a little sugar on top of each cookie for added crunch and sweetness.
    • Bake for 12–15 minutes, or until the edges are just lightly golden.
  5. Cool and Serve:

    • Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
