Vanilla Bean Lavender Shortbread Cookies
Ingredients:
- 2 cups (250g) all-purpose flour
- ½ cup (100g) granulated sugar
- 1 cup (230g) unsalted butter, softened
- 1 tsp pure vanilla extract
- Seeds from 1 vanilla bean or 1 tsp vanilla bean paste
- 1 tbsp dried culinary lavender (finely chopped)
- ¼ tsp salt
- Optional: 1 tbsp milk (if dough is too crumbly)
- 2 tbsp granulated sugar (for sprinkling on top)
Instructions:
Preheat the Oven:
- Preheat your oven to 325°F (160°C).
- Line a baking sheet with parchment paper.
Prepare the Dough:
- In a large bowl, beat the softened butter and sugar together until light and fluffy using a hand or stand mixer.
- Mix in the vanilla extract and vanilla bean seeds (or paste).
- Add the finely chopped lavender and salt, stirring until well combined.
- Gradually add the flour, mixing just until the dough comes together. If the dough is too crumbly, add 1 tbsp of milk to bind it.
Shape the Cookies:
- Turn the dough out onto a lightly floured surface. Roll it into a log or flatten it into a disc, wrap it in plastic wrap, and refrigerate for 30 minutes to firm up.
- Roll the dough to about ¼-inch (6mm) thickness and cut into desired shapes using cookie cutters.
- Alternatively, slice the chilled log into ¼-inch thick rounds.
Bake:
- Place the cookies on the prepared baking sheet, spacing them about 1 inch apart.
- Sprinkle a little sugar on top of each cookie for added crunch and sweetness.
- Bake for 12–15 minutes, or until the edges are just lightly golden.
Cool and Serve:
- Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
