Ingredients:

    • 1 cup ricotta cheese
    • 2 tbsp powdered sugar
    • Zest of 1 lemon
    • 2 tbsp lemon juice
    • ½ tsp vanilla extract
  • For garnish:

    • Honey or maple syrup for drizzling
    • Fresh berries (optional)
    • Mint leaves (optional)
    • Powdered sugar for dusting

Instructions:

  1. Prepare the crêpe batter:

    • In a large mixing bowl, whisk together the flour, sugar, and salt.
    • In another bowl, beat the eggs, then whisk in the milk, melted butter, and vanilla extract. Gradually add the wet ingredients to the dry ingredients, whisking until smooth. Let the batter rest for 30 minutes at room temperature.
  2. Prepare the filling:

    • In a medium bowl, mix ricotta cheese, powdered sugar, lemon zest, lemon juice, and vanilla extract until creamy and well combined. Set aside.
  3. Cook the crêpes:

    • Heat a non-stick skillet or crêpe pan over medium heat. Lightly grease with butter.
