Ingredients:

- 1 medium tomato, diced
- 1 small cucumber, diced
- ½ red onion, thinly sliced

Instructions:
Prepare the gyro meat:
- Preheat oven to 350°F (175°C).
- In a large bowl, mix ground lamb, grated onion, garlic, oregano, cumin, paprika, coriander, salt, pepper, and breadcrumbs until well combined.
- Press the meat mixture into a loaf shape on a baking sheet lined with parchment paper.
- Bake for 35-40 minutes, or until the internal temperature reaches 160°F (71°C).
- Let the meat rest for 10 minutes, then slice thinly.
