Ingredients:

  • For the gyro meat:

    • 1 lb ground lamb (or a mix of lamb and beef)

    • 1 tsp ground cumin
    • ½ tsp smoked paprika
    • ½ tsp ground coriander
    • ½ tsp salt
    • ½ tsp black pepper
    • 1 tbsp breadcrumbs (optional, for binding)
  • For the garlic yogurt sauce:

    • 1 cup plain Greek yogurt
    • 2 garlic cloves, minced
    • 1 tbsp lemon juice
    • 1 tbsp olive oil
    • Salt and pepper to taste
  • For the assembly:

    • 4 pita breads or flatbreads
    • 1 cup shredded lettuce
    • 1 medium tomato, diced
    • 1 small cucumber, diced
    • ½ red onion, thinly sliced
    • Optional: crumbled feta cheese, olives

Instructions:

  1. Prepare the gyro meat:

    • Preheat oven to 350°F (175°C).
    • In a large bowl, mix ground lamb, grated onion, garlic, oregano, cumin, paprika, coriander, salt, pepper, and breadcrumbs until well combined.
    • Press the meat mixture into a loaf shape on a baking sheet lined with parchment paper.
    • Bake for 35-40 minutes, or until the internal temperature reaches 160°F (71°C).
    • Let the meat rest for 10 minutes, then slice thinly.
  2. Make the garlic yogurt sauce:

    • In a small bowl, combine Greek yogurt, minced garlic, lemon juice, olive oil, salt, and pepper. Mix well and refrigerate until ready to use.
  3. Assemble the gyros:

    • Warm the pita breads in a dry skillet or oven.
    • Layer shredded lettuce, diced tomato, cucumber, red onion, and slices of gyro meat on each pita.
    • Drizzle with garlic yogurt sauce and sprinkle with optional feta cheese or olives if desired.
  4. Serve:

    • Fold the pita around the filling, wrap in parchment paper or foil for easy eating, and enjoy warm!
