New Nasi Goreng Recipe:Spicy Mango Nasi Goreng 🍚🥭🔥
Ingredients:
For the rice:
- 3 cups cooked jasmine rice (preferably day-old)
- 2 tbsp vegetable oil
For the spice base (sambal):
- 2 red chilies, chopped (adjust for spice level)
- 2 cloves garlic
- 1 small shallot
- 1 tsp shrimp paste (optional)
- 1 tbsp soy sauce
- 1 tbsp sweet soy sauce (kecap manis)
- 1 tsp tamarind paste
For the main dish:
- 1 medium onion, thinly sliced
- 1 carrot, julienned
- ½ cup fresh or frozen peas
- 1 cup cooked chicken, shrimp, or tofu, diced
- 1 small mango, diced
- 1 egg, lightly beaten (optional)
For garnish:
- Fried shallots
- Fresh cilantro or green onions, chopped
- Sliced cucumber
- Lime wedges
- Prawn crackers (optional)
Instructions:
Prepare the spice base:
- Blend or grind chilies, garlic, shallot, and shrimp paste into a paste using a mortar and pestle or food processor. Add soy sauce, sweet soy sauce, and tamarind paste to form a smooth sambal.
Stir-fry the base:
- Heat oil in a large wok or skillet over medium heat. Add the sambal and cook for 2-3 minutes until fragrant.
Cook the vegetables and protein:
- Add onions, carrots, and peas to the wok. Stir-fry for 2-3 minutes until slightly softened.
- Stir in the cooked chicken, shrimp, or tofu and mix well.
Add the rice and mango:
- Increase heat to high. Add the cooked rice to the wok, breaking up any clumps. Toss well to coat the rice in the sambal.
- Gently fold in diced mango for a sweet and tangy contrast.
Optional egg:
- Push the rice to one side of the wok. Pour the beaten egg into the empty space and scramble until set. Mix it into the rice.
Serve:
- Transfer the Nasi Goreng to a serving platter. Garnish with fried shallots, cilantro or green onions, cucumber slices, and lime wedges. Serve with prawn crackers if desired.
Optional Variations:
- Replace mango with pineapple or papaya for a tropical twist.
- Add a fried egg (sunny-side-up) on top for a classic touch.
- Use tempeh for a plant-based protein alternative.
