Ingredients:

  • For the rice:

    • 3 cups cooked jasmine rice (preferably day-old)
    • 2 tbsp vegetable oil
  • For the spice base (sambal):

    • 2 red chilies, chopped (adjust for spice level)
    • 2 cloves garlic
    • 1 small shallot
    • 1 tsp shrimp paste (optional)
    • 1 tbsp soy sauce
    • 1 tbsp sweet soy sauce (kecap manis)
    • 1 tsp tamarind paste
  • For the main dish:

    • 1 medium onion, thinly sliced
    • 1 carrot, julienned
    • ½ cup fresh or frozen peas
    • 1 cup cooked chicken, shrimp, or tofu, diced
    • 1 small mango, diced
    • 1 egg, lightly beaten (optional)
  • For garnish:

    • Fried shallots
    • Fresh cilantro or green onions, chopped
    • Sliced cucumber
    • Lime wedges
    • Prawn crackers (optional)

Instructions:

  1. Prepare the spice base:

    • Blend or grind chilies, garlic, shallot, and shrimp paste into a paste using a mortar and pestle or food processor. Add soy sauce, sweet soy sauce, and tamarind paste to form a smooth sambal.
  2. Stir-fry the base:

    • Heat oil in a large wok or skillet over medium heat. Add the sambal and cook for 2-3 minutes until fragrant.
  3. Cook the vegetables and protein:

    • Add onions, carrots, and peas to the wok. Stir-fry for 2-3 minutes until slightly softened.
    • Stir in the cooked chicken, shrimp, or tofu and mix well.
  4. Add the rice and mango:

    • Increase heat to high. Add the cooked rice to the wok, breaking up any clumps. Toss well to coat the rice in the sambal.
    • Gently fold in diced mango for a sweet and tangy contrast.
  5. Optional egg:

    • Push the rice to one side of the wok. Pour the beaten egg into the empty space and scramble until set. Mix it into the rice.
  6. Serve:

    • Transfer the Nasi Goreng to a serving platter. Garnish with fried shallots, cilantro or green onions, cucumber slices, and lime wedges. Serve with prawn crackers if desired.

Optional Variations:

  • Replace mango with pineapple or papaya for a tropical twist.
  • Add a fried egg (sunny-side-up) on top for a classic touch.
  • Use tempeh for a plant-based protein alternative.
