Ingredients:

  • For the marinade:

    • 500g chicken breast or thighs, cut into bite-sized strips
    • ½ cup fresh pineapple juice
    • 2 tbsp soy sauce
    • 1 tbsp fish sauce (optional)
    • 1 tbsp ginger, grated
    • 2 cloves garlic, minced
    • 1 tbsp brown sugar or honey
    • 1 tsp turmeric powder
    • ½ tsp chili flakes (optional)
    • 2 tbsp vegetable oil
  • For the peanut dipping sauce:

    • ½ cup creamy peanut butter
    • 2 tbsp soy sauce
    • 1 tbsp fish sauce (optional)
    • 1 tbsp lime juice
    • 1 tbsp brown sugar
    • 1 tsp red curry paste or chili sauce
    • ½ cup coconut milk (adjust for desired consistency)
  • For garnish and serving:

    • Fresh cilantro leaves, chopped
    • Sliced cucumber
    • Lime wedges
    • Cooked jasmine rice (optional)

Instructions:

  1. Marinate the chicken:

    • In a large bowl, whisk together pineapple juice, soy sauce, fish sauce, ginger, garlic, brown sugar, turmeric, chili flakes, and vegetable oil. Add the chicken strips, toss to coat, and marinate for at least 1 hour (overnight for deeper flavor).
  2. Prepare the peanut sauce:

    • In a saucepan, combine peanut butter, soy sauce, fish sauce, lime juice, brown sugar, red curry paste, and coconut milk. Heat over low-medium heat, stirring until smooth and creamy. Adjust seasoning to taste and set aside.
  3. Assemble the satay:

    • Preheat a grill or grill pan to medium-high heat. Thread the marinated chicken onto wooden skewers (soak the skewers in water for 30 minutes to prevent burning).
  4. Cook the satay:

    • Grill the skewers for 3-4 minutes per side or until the chicken is cooked through and slightly charred. Brush with additional marinade during grilling for extra flavor.
  5. Serve:

    • Arrange the satay skewers on a platter. Garnish with fresh cilantro. Serve hot with peanut dipping sauce, sliced cucumber, lime wedges, and jasmine rice if desired.

Optional Variations:

  • Use tofu, shrimp, or beef instead of chicken.
  • Add diced pineapple chunks to the skewers for a sweet-tangy bite.
  • Substitute almond butter or cashew butter for the peanut sauce if needed.
