Sachertorte (Austrian Chocolate Cake)

(A rich and decadent Austrian chocolate cake with a smooth apricot jam filling and a glossy chocolate glaze—Vienna’s most famous dessert!)


Ingredients

For the Cake:

  • ½ cup (115g) unsalted butter, softened
  • ¾ cup (150g) granulated sugar
  • 6 large eggs, separated
  • 5 oz (140g) dark chocolate (70% cocoa), melted and slightly cooled
  • 1 tsp vanilla extract
  • 1 cup (125g) all-purpose flour
  • ¼ tsp salt

For the Filling:

  • ½ cup (150g) apricot jam, warmed and strained

For the Chocolate Glaze:

  • 5 oz (140g) dark chocolate (70% cocoa), chopped
  • ½ cup (120ml) heavy cream

For Serving:

  • Whipped cream (Schlagobers)

Instructions

1. Prepare the Cake Batter:

  1. Preheat oven to 350°F (175°C). Grease and line a 9-inch (23cm) springform pan with parchment paper.
  2. In a bowl, beat butter and half of the sugar until light and fluffy.
  3. Add egg yolks, one at a time, mixing well after each addition.
  4. Stir in the melted chocolate and vanilla extract until smooth.
  5. In a separate clean bowl, beat egg whites with salt until soft peaks form. Gradually add the remaining sugar and beat until stiff peaks form.
  6. Gently fold the egg whites into the chocolate mixture.
  7. Sift in the flour and carefully fold it in until just combined.

2. Bake the Cake:

  1. Pour the batter into the prepared pan and smooth the top.
  2. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
  3. Let cool completely, then remove from the pan and slice the cake horizontally into two layers.

3. Assemble the Cake:

  1. Warm the apricot jam and brush it over the cut sides of the cake.
  2. Sandwich the two layers together and spread a thin layer of jam over the top and sides of the cake.

4. Make the Chocolate Glaze:

  1. Heat heavy cream in a saucepan until hot but not boiling.
  2. Remove from heat and add chopped chocolate, stirring until smooth.
  3. Pour the glaze over the cake, letting it drip smoothly over the sides.

5. Serve & Enjoy:

  • Allow the glaze to set for at least 30 minutes before slicing.
  • Serve with a dollop of whipped cream for the authentic Viennese experience!
