Sachertorte (Austrian Chocolate Cake)

Ingredients
For the Cake:
- ½ cup (115g) unsalted butter, softened
- ¾ cup (150g) granulated sugar
- 6 large eggs, separated
- 5 oz (140g) dark chocolate (70% cocoa), melted and slightly cooled
- 1 tsp vanilla extract
- 1 cup (125g) all-purpose flour
- ¼ tsp salt
For the Filling:
- ½ cup (150g) apricot jam, warmed and strained
For the Chocolate Glaze:
- 5 oz (140g) dark chocolate (70% cocoa), chopped
- ½ cup (120ml) heavy cream
For Serving:
- Whipped cream (Schlagobers)
Instructions
1. Prepare the Cake Batter:
- Preheat oven to 350°F (175°C). Grease and line a 9-inch (23cm) springform pan with parchment paper.
- In a bowl, beat butter and half of the sugar until light and fluffy.
- Add egg yolks, one at a time, mixing well after each addition.
- Stir in the melted chocolate and vanilla extract until smooth.
- In a separate clean bowl, beat egg whites with salt until soft peaks form. Gradually add the remaining sugar and beat until stiff peaks form.
- Gently fold the egg whites into the chocolate mixture.
- Sift in the flour and carefully fold it in until just combined.
2. Bake the Cake:
- Pour the batter into the prepared pan and smooth the top.
- Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool completely, then remove from the pan and slice the cake horizontally into two layers.
3. Assemble the Cake:
- Warm the apricot jam and brush it over the cut sides of the cake.
- Sandwich the two layers together and spread a thin layer of jam over the top and sides of the cake.
4. Make the Chocolate Glaze:
- Heat heavy cream in a saucepan until hot but not boiling.
- Remove from heat and add chopped chocolate, stirring until smooth.
- Pour the glaze over the cake, letting it drip smoothly over the sides.
5. Serve & Enjoy:
- Allow the glaze to set for at least 30 minutes before slicing.
- Serve with a dollop of whipped cream for the authentic Viennese experience!
