Dutch Stamppot

(A traditional Dutch comfort dish featuring mashed potatoes mixed with vegetables, served with smoky sausage and a rich gravy.)


Ingredients

For the Stamppot (Mashed Potatoes with Vegetables):

  • 2 lbs potatoes (Yukon Gold or Russet), peeled and cubed
  • 1 lb kale (or curly endive, or sauerkraut), chopped
  • 1 cup milk (warm)
  • 4 tbsp butter
  • Salt & black pepper, to taste
  • 1 tsp nutmeg (optional)

For the Sausage & Gravy:

  • 1 smoked Dutch rookworst (or kielbasa, bratwurst)
  • 1 tbsp butter
  • 1 small onion, finely chopped
  • 1 tbsp flour
  • 1 cup beef broth
  • 1 tsp Dijon mustard
  • Salt & pepper, to taste

Instructions

1. Cook the Potatoes & Vegetables:

  1. In a large pot, boil potatoes in salted water for 15 minutes.
  2. Add chopped kale (or preferred vegetable) on top of the potatoes and cook for another 5 minutes until soft.
  3. Drain and return to the pot.

2. Mash the Stamppot:

  1. Add warm milk, butter, salt, pepper, and nutmeg to the potatoes and mash until creamy.
  2. Stir in the cooked vegetables until well combined.

3. Prepare the Sausage & Gravy:

  1. Heat rookworst according to package instructions (usually by simmering in water).
  2. In a pan, melt butter, then sauté onion until golden.
  3. Stir in flour and cook for 1 minute.
  4. Gradually whisk in beef broth and Dijon mustard, cooking until thickened.
  5. Season with salt & pepper.

4. Serve & Enjoy:

  • Plate the stamppot, place the rookworst on top, and drizzle with gravy.
  • Optional: Add crispy fried bacon bits or a fried egg on top!
