Homemade Neapolitan Ice Cream
Ingredients:
For the Base:
- 6 cups (1.5 liters) heavy cream (divided into 3 portions, 2 cups each)
- 3 cups (750ml) whole milk (divided into 3 portions, 1 cup each)
- 1½ cups (300g) granulated sugar (divided into 3 portions, ½ cup each)
- 12 large egg yolks (divided into 3 portions, 4 yolks each)
- Pinch of salt (divided into 3 portions)
For the Vanilla Layer:
- 1½ tsp vanilla extract
For the Chocolate Layer:
- 4 oz (115g) dark chocolate, melted
- 2 tbsp cocoa powder
For the Strawberry Layer:
- 2 cups (300g) fresh strawberries, hulled and chopped
- 2 tbsp granulated sugar (extra, for the strawberry puree)
Instructions:
Step 1: Prepare the Base Custards
- For each flavor, repeat the following steps:
- Combine 2 cups of heavy cream, 1 cup of milk, ½ cup of sugar, and a pinch of salt in a medium saucepan. Heat over medium heat until the mixture is hot but not boiling.
- In a separate bowl, whisk 4 egg yolks until creamy. Gradually ladle about ½ cup of the hot cream mixture into the yolks while whisking constantly to temper them.
- Slowly pour the tempered yolks back into the saucepan, stirring continuously over low heat until the mixture thickens and coats the back of a spoon (do not let it boil).
- Strain the custard through a fine sieve, cool to room temperature, and refrigerate for at least 4 hours or overnight.
Step 2: Flavor the Layers
- Vanilla Layer: Stir 1½ tsp vanilla extract into one portion of the chilled custard.
- Chocolate Layer: Whisk the melted dark chocolate and cocoa powder into the second portion of custard until smooth.
- Strawberry Layer: Blend the strawberries with the extra 2 tbsp sugar to make a puree. Strain the puree to remove seeds (optional) and stir it into the third portion of custard.
Step 3: Churn Each Flavor
- One at a time, churn each flavored custard in an ice cream maker according to the manufacturer’s instructions (usually 20–25 minutes per flavor).
- After churning each flavor, transfer it to an airtight container and freeze while preparing the next layer.
Step 4: Assemble the Neapolitan Ice Cream
- In a loaf pan or rectangular container, spread the chocolate ice cream evenly at the bottom.
- Freeze for 15 minutes to firm up slightly.
- Gently spread the vanilla ice cream on top of the chocolate layer. Freeze for another 15 minutes.
- Finally, spread the strawberry ice cream on top of the vanilla layer.
- Cover and freeze the assembled ice cream for 4–6 hours or until firm.
Step 5: Serve
- Slice the Neapolitan ice cream to showcase the layers, or scoop it to mix the flavors together.
- Serve as is, or garnish with chocolate shavings, fresh strawberries, or whipped cream.
