Homemade Coffee Ice Cream
Ingredients:
- 2 cups (500ml) heavy cream
- 1 cup (250ml) whole milk
- ¾ cup (150g) granulated sugar
- 4 large egg yolks
- ¼ cup (25g) finely ground coffee (or espresso powder)
- 1 tsp vanilla extract
- Pinch of salt
- Optional: 2 tbsp coffee liqueur (e.g., Kahlúa) for enhanced flavor and creaminess
Instructions:
Step 1: Infuse the Coffee Flavor
- In a medium saucepan, combine the heavy cream, milk, and ground coffee.
- Heat over medium heat until the mixture is hot but not boiling. Remove from heat and let it steep for 15–20 minutes for a stronger coffee flavor.
- Strain the mixture through a fine sieve or cheesecloth to remove the coffee grounds. Return the liquid to the saucepan.
Step 2: Make the Custard Base
- In a mixing bowl, whisk the egg yolks and sugar until pale and creamy.
- Slowly ladle about ½ cup of the warm coffee-infused cream mixture into the yolks while whisking constantly to temper them.
- Gradually pour the tempered yolks back into the saucepan with the remaining coffee mixture, stirring continuously.
- Cook over low heat, stirring, until the custard thickens slightly and coats the back of a spoon (do not let it boil).
- Remove from heat and stir in the vanilla extract and coffee liqueur (if using).
- Strain the custard through a fine sieve to ensure smoothness. Let it cool to room temperature, then refrigerate for at least 4 hours or overnight.
Step 3: Churn the Ice Cream
- Pour the chilled coffee custard into an ice cream maker and churn according to the manufacturer’s instructions (usually 20–25 minutes).
Step 4: Freeze and Serve
- Transfer the churned ice cream to an airtight container and freeze for 4–6 hours until firm.
- Scoop and serve, optionally garnished with coffee beans, chocolate shavings, or a drizzle of caramel sauce.
