Classic English Scones

Ingredients

  • 2 ½ cups all-purpose flour
  • 2 tbsp granulated sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • ½ cup cold unsalted butter, cubed
  • ¾ cup cold whole milk
  • 1 large egg
  • 1 tsp vanilla extract (optional)
  • 1 egg yolk + 1 tbsp milk (for egg wash)

For Serving:

  • Clotted cream
  • Strawberry or raspberry jam

Instructions

1. Prepare the Dough:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. Rub in the cold butter with your fingers or a pastry cutter until the mixture resembles coarse crumbs.
  4. In a separate bowl, whisk together milk, egg, and vanilla extract.
  5. Gradually add the wet ingredients to the flour mixture, stirring gently until a soft dough forms.

2. Shape the Scones:

  1. Lightly flour a surface and roll out the dough to about ¾ inch (2 cm) thick.
  2. Use a round cutter (2–2.5 inches in diameter) to cut out scones.
  3. Place them on the prepared baking sheet, spacing them 1 inch apart.
  4. Brush the tops with the egg wash for a golden finish.

3. Bake & Serve:

  1. Bake for 12–15 minutes, until golden brown on top.
  2. Let cool slightly before serving.
  3. Serve warm with clotted cream and jam.
