Classic English Scones

Ingredients
- 2 ½ cups all-purpose flour
- 2 tbsp granulated sugar
- 1 tbsp baking powder
- ½ tsp salt
- ½ cup cold unsalted butter, cubed
- ¾ cup cold whole milk
- 1 large egg
- 1 tsp vanilla extract (optional)
- 1 egg yolk + 1 tbsp milk (for egg wash)
For Serving:
- Clotted cream
- Strawberry or raspberry jam
Instructions
1. Prepare the Dough:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- Rub in the cold butter with your fingers or a pastry cutter until the mixture resembles coarse crumbs.
- In a separate bowl, whisk together milk, egg, and vanilla extract.
- Gradually add the wet ingredients to the flour mixture, stirring gently until a soft dough forms.
2. Shape the Scones:
- Lightly flour a surface and roll out the dough to about ¾ inch (2 cm) thick.
- Use a round cutter (2–2.5 inches in diameter) to cut out scones.
- Place them on the prepared baking sheet, spacing them 1 inch apart.
- Brush the tops with the egg wash for a golden finish.
3. Bake & Serve:
- Bake for 12–15 minutes, until golden brown on top.
- Let cool slightly before serving.
- Serve warm with clotted cream and jam.
