Duck Blood Soup with Meat & Vegetables

Ingredients
For the Broth:
- 4 cups duck stock (or chicken stock if duck stock is unavailable)
- 2 cups water
- 1 tbsp soy sauce
- 1 tbsp rice vinegar (for a slight tang)
- 2 garlic cloves (minced)
- 1-inch piece of ginger (sliced)
- 1 tsp five-spice powder
- 1 tbsp dark soy sauce (for depth of flavor)
- 1 tbsp sesame oil
- 1 tbsp brown sugar
- ½ tsp white pepper
For the Meat & Blood:
- 1 lb duck breast or duck legs (skin removed, cut into bite-sized pieces)
- 1 block of duck blood (cubed, can be found in Asian markets)
- 1 tbsp vegetable oil (for searing the duck)
For the Vegetables:
- 1 cup shiitake mushrooms (or button mushrooms), sliced
- 2 cups bok choy (or napa cabbage), chopped
- 1 small onion, thinly sliced
- 1 medium carrot, thinly sliced
- 2 green onions, chopped (for garnish)
Optional Garnishes:
- Fresh cilantro
- Slices of chili pepper (for heat, optional)
- A drizzle of sesame oil (for finishing)
Instructions
1. Prepare the Duck and Broth:
- In a large pot, heat vegetable oil over medium-high heat.
- Add the duck pieces and sear for 3–4 minutes until browned on all sides.
- Once seared, add the duck stock, water, soy sauce, rice vinegar, ginger, garlic, five-spice powder, dark soy sauce, sesame oil, brown sugar, and white pepper to the pot.
- Bring to a simmer and cook for about 40–50 minutes, allowing the flavors to meld and the duck to become tender.
2. Add the Duck Blood and Vegetables:
- Gently add the duck blood cubes into the simmering broth. Stir carefully, allowing the blood to soften and blend with the broth.
- Add the mushrooms, bok choy, carrot, and onion. Continue to simmer for another 10–15 minutes, until the vegetables are tender but still vibrant.
3. Adjust Seasoning:
- Taste the soup and adjust the seasoning with more soy sauce or rice vinegar, depending on your desired balance of flavors (more vinegar for acidity, more soy sauce for saltiness).
4. Serve:
- Ladle the soup into bowls, ensuring an even mix of duck, vegetables, and duck blood.
- Garnish with chopped green onions, cilantro, and a few slices of chili pepper for added heat if desired.
- Drizzle a little sesame oil on top for extra fragrance.
