Ingredients

For the Broth:

  • 4 cups beef broth (or homemade beef stock)
  • 2 cups water
  • 1 tbsp soy sauce

  • 2 garlic cloves (minced)
  • 1-inch piece of ginger (sliced)
  • 1 tsp five-spice powder
  • 1 tbsp brown sugar
  • ½ tsp white pepper

For the Meat:

  • 1 lb beef chuck or brisket (cut into thin slices or chunks)
  • 1 tbsp vegetable oil (for searing)

For the Vegetables:

  • 2 cups bok choy (or napa cabbage), chopped
  • 1 cup carrots (thinly sliced)
  • 1 cup shiitake mushrooms (or button mushrooms), sliced
  • 1 small onion, sliced

For the Noodles:

  • 4 oz egg noodles (or any preferred noodles)
  • 1 tbsp soy sauce (for noodle flavor)

Garnishes:

  • Fresh cilantro (optional)
  • Chopped green onions
  • Slices of red chili (for spice, optional)

Instructions

1. Prepare the Beef and Broth:

  • Heat vegetable oil in a large pot over medium-high heat.
  • Add the beef slices and sear for 3–4 minutes until browned on all sides.
  • Once seared, add the beef broth, water, soy sauce, sesame oil, oyster sauce, garlic, ginger, five-spice powder, and brown sugar to the pot.
  • Bring to a gentle simmer and let it cook for about 1–1.5 hours, or until the beef is tender and the flavors have developed.

2. Cook the Noodles:

  • While the broth is simmering, cook the egg noodles according to package instructions. Drain and set aside.
  • Once cooked, toss the noodles with soy sauce to add flavor.

3. Add the Vegetables:

  • Add the carrots, mushrooms, bok choy, and onions to the broth.
  • Simmer for another 10–15 minutes, until the vegetables are tender but still vibrant.

4. Assemble the Soup:

  • Place the noodles into bowls.
  • Ladle the broth, beef, and vegetables over the noodles.

5. Garnish and Serve:

  • Top with fresh cilantro, chopped green onions, and slices of red chili for an extra burst of flavor.
