Spicy Vegetable Bunny Chow 🥕🍞
Ingredients:
For the Curry Filling:
- 2 tbsp vegetable oil
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 2 medium carrots, diced
- 1 cup cauliflower florets (or other vegetables of choice, like potatoes or peas)
- 1 large tomato, chopped
- 1 cup cooked chickpeas (or kidney beans)
- 1 tbsp curry powder
- 1 tsp ground cumin
- 1 tsp turmeric
- 1 tsp ground coriander
- 1/2 tsp ground cinnamon
- 1-2 tsp chili powder (adjust for desired heat level)
- Salt and pepper to taste
- 1 cup coconut milk (or vegetable broth)
- 1/2 cup fresh cilantro, chopped
- Juice of 1 lime
For the Bunny Chow Bread:
- 4 small white or whole-wheat loaves (or 2 larger bread loaves, hollowed out)
- Butter for brushing (optional)
Instructions:
Prepare the curry filling:
- Heat 2 tablespoons of vegetable oil in a large pot over medium heat. Add the chopped onion and cook for 3-4 minutes, until softened and translucent.
- Add the minced garlic and grated ginger, cooking for another minute until fragrant.
- Stir in the diced carrots, cauliflower florets, and chopped tomato. Cook for 5-6 minutes, allowing the vegetables to soften slightly.
- Add the curry powder, ground cumin, turmeric, ground coriander, ground cinnamon, and chili powder. Stir well to coat the vegetables with the spices, and cook for 2 minutes to release the flavors.
- Add the cooked chickpeas (or kidney beans), coconut milk (or vegetable broth), and salt and pepper to taste. Simmer for 15-20 minutes, or until the vegetables are tender and the sauce has thickened.
- Stir in the chopped cilantro and lime juice for added freshness.
Prepare the bread:
- While the curry is simmering, slice the small bread loaves in half horizontally (if using large loaves, hollow them out by cutting a square hole in the top to form a "bowl").
- Optionally, you can brush the bread with a little butter and toast it in the oven or on a pan until golden for extra flavor and crunch.
Assemble the Bunny Chow:
- Once the curry is ready, spoon a generous amount into the hollowed-out bread bowls. Be sure to pack it in tightly for maximum flavor.
- Garnish with more fresh cilantro and a squeeze of lime if desired.
Serve:
- Serve the Bunny Chow immediately while hot, with extra curry on the side if needed. Enjoy the warm, spicy, and hearty dish!
Optional Variations:
- Meat Option: Add chunks of chicken or lamb to the curry for a meat-based version of Bunny Chow.
- Spicy Twist: Adjust the amount of chili powder or add chopped fresh chilies for more heat.
- Vegetarian/Vegan Option: This dish is already vegetarian and vegan, but you can make it even heartier by adding potatoes or sweet potatoes to the curry.
