Savory Spiced Bobotie with Mango Chutney 🍛🍍
Ingredients:
For the Bobotie Filling:
- 2 tbsp vegetable oil
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1 lb (450g) ground beef or lamb
- 1/2 cup bread crumbs (soaked in 1/4 cup milk)
- 1/4 cup raisins or sultanas
- 1/4 cup slivered almonds (optional)
- 2 tbsp curry powder
- 1 tsp ground turmeric
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1/2 tsp ground cinnamon
- 1 tbsp brown sugar
- 1 tbsp white wine vinegar
- 2 tbsp Worcestershire sauce
- 2 large eggs (beaten)
- Salt and pepper to taste
For the Egg Custard Topping:
- 1 cup milk
- 2 large eggs
- 1/2 tsp ground turmeric (for color)
- 1/4 tsp ground black pepper
- Pinch of salt
For Serving:
- Mango chutney
- Fresh coriander (cilantro) for garnish
Instructions:
Prepare the Bobotie Filling:
- Preheat your oven to 350°F (175°C).
- In a large pan, heat 2 tablespoons of vegetable oil over medium heat. Add the chopped onion and garlic, and sauté for about 3-4 minutes until softened and golden.
- Add the ground beef or lamb to the pan, breaking it up with a spoon, and cook until browned and cooked through.
- Stir in the curry powder, turmeric, coriander, cumin, cinnamon, and brown sugar. Cook for 1-2 minutes until the spices are fragrant.
- Add the soaked bread crumbs (with the milk), raisins, Worcestershire sauce, and vinegar. Mix everything well and let it simmer for 5 minutes to combine the flavors. Season with salt and pepper.
- Remove the pan from heat, and allow the mixture to cool for a few minutes before stirring in the beaten eggs to bind the mixture together.
Prepare the Egg Custard Topping:
- In a separate bowl, whisk together the milk, eggs, ground turmeric, black pepper, and salt until smooth. This will form the custard topping for the Bobotie.
Assemble and Bake:
- Transfer the Bobotie filling into a greased baking dish (about 9x9 inches). Spread it out evenly and press it down gently.
- Pour the egg custard topping evenly over the filling, spreading it out to cover the entire surface.
- Place the baking dish in the oven and bake for 30-40 minutes, or until the custard is set and golden brown on top. The top should be firm and slightly browned.
Serve:
- Remove the Bobotie from the oven and allow it to rest for 5-10 minutes before serving.
- Garnish with fresh coriander leaves and serve with a generous helping of mango chutney on the side.
Optional Variations:
- Vegetarian Option: Use lentils or a plant-based ground meat substitute instead of ground beef or lamb.
- Spicy Option: Add fresh chilies or chili flakes for extra heat in the filling.
- Nutty Option: For extra texture and flavor, add chopped cashews or pistachios to the filling alongside the almonds.
- Fruit Variation: Add a bit of chopped apples or pineapples to the filling for a sweet contrast.
