Spiced Lamb and Chicken Shawarma with Tangy Yogurt Sauce

Ingredients:

  • For the Shawarma Marinade:

    • 1 lb (450 g) boneless chicken thighs, sliced
    • 1 lb (450 g) lamb shoulder or leg, sliced
    • 3 tbsp olive oil
    • Juice of 1 lemon
    • 4 cloves garlic, minced
    • 2 tsp ground cumin
    • 1½ tsp ground coriander
    • 1 tsp smoked paprika
    • 1 tsp ground turmeric
    • 1 tsp cinnamon
    • ½ tsp ground cloves
    • 1 tsp cayenne pepper (optional)
    • 1½ tsp salt
    • 1 tsp black pepper
  • For the Tangy Yogurt Sauce:

    • ½ cup Greek yogurt
    • Juice of ½ lemon
    • 1 clove garlic, minced
    • 2 tbsp tahini
    • 1 tbsp fresh dill or parsley, chopped
    • Salt and pepper to taste
  • For Assembly:

    • Warm pita bread or flatbreads
    • Shredded lettuce
    • Sliced tomatoes
    • Thinly sliced red onions
    • Pickles or pickled turnips
    • Fresh parsley for garnish

Instructions:

  1. Prepare the marinade:

    • In a large bowl, mix olive oil, lemon juice, garlic, and all the spices. Add the sliced chicken and lamb, tossing to coat evenly. Cover and marinate in the refrigerator for at least 2 hours (preferably overnight).
  2. Cook the Shawarma:

    • Option 1: Skillet – Heat a large skillet over medium-high heat. Cook the meat in batches, searing each side until golden and fully cooked (about 4-5 minutes per side).
    • Option 2: Oven – Preheat your oven to 400°F (200°C). Spread the marinated meat on a baking sheet and roast for 20-25 minutes, flipping halfway through.
    • Option 3: Grill – Grill the meat over medium-high heat for 3-4 minutes per side until charred and cooked through.
  3. Make the yogurt sauce:

    • In a small bowl, whisk together Greek yogurt, lemon juice, garlic, tahini, dill, and a pinch of salt and pepper. Adjust seasoning as needed.
  4. Assemble the Shawarma wraps:

    • Warm the pita bread and spread a generous layer of yogurt sauce. Add a mix of chicken and lamb slices, followed by lettuce, tomatoes, onions, and pickles. Garnish with fresh parsley.
  5. Serve and enjoy:

    • Wrap tightly and serve immediately with extra yogurt sauce on the side.

Optional Variations:

  • Vegetarian Option: Use marinated tofu, tempeh, or roasted vegetables like eggplant, zucchini, and mushrooms.
  • Spicy Twist: Add a drizzle of spicy harissa or chili garlic sauce for heat.
  • Extra Crunch: Add fried potato strips or crispy chickpeas for texture.
