Roasted Garlic and Sun-Dried Tomato Hummus 🧄🍅✨
Ingredients:
- 1½ cups cooked chickpeas (or one 15 oz can, drained and rinsed)
- 3 tbsp tahini
- Juice of 1 lemon
- 3 cloves roasted garlic (see instructions)
- ¼ cup sun-dried tomatoes (oil-packed or rehydrated if dry)
- 3 tbsp extra virgin olive oil
- ½ tsp ground cumin
- ½ tsp smoked paprika
- ½ tsp salt (or to taste)
- 2-3 tbsp water (to adjust consistency)
Optional Garnishes:
- Drizzle of olive oil
- Chopped parsley
- Chopped sun-dried tomatoes
- Sprinkle of smoked paprika or sesame seeds
Instructions:
Roast the garlic:
- Preheat your oven to 375°F (190°C). Wrap unpeeled garlic cloves in foil with a drizzle of olive oil. Roast for 20-25 minutes until soft and golden. Let cool, then squeeze out the roasted garlic paste.
Blend the base:
- In a food processor, combine chickpeas, tahini, roasted garlic, sun-dried tomatoes, lemon juice, cumin, smoked paprika, and salt. Blend until the mixture starts to come together.
Add oil and adjust consistency:
- With the food processor running, slowly drizzle in olive oil. Add water, 1 tablespoon at a time, until the hummus reaches your desired creamy consistency. Taste and adjust seasoning as needed.
Serve and garnish:
- Transfer the hummus to a serving bowl. Drizzle with olive oil and sprinkle with smoked paprika or sesame seeds. Garnish with chopped sun-dried tomatoes and parsley for an extra pop of flavor.
Optional Variations:
- Spicy Version: Add ½ tsp red pepper flakes or a roasted chili for heat.
- Herbaceous Twist: Blend in fresh basil or cilantro for a green hummus.
- Nutty Note: Replace some tahini with almond or cashew butter for a different flavor profile.
