Roasted Garlic and Sun-Dried Tomato Hummus

Ingredients:

  • 1½ cups cooked chickpeas (or one 15 oz can, drained and rinsed)
  • 3 tbsp tahini
  • Juice of 1 lemon
  • 3 cloves roasted garlic (see instructions)
  • ¼ cup sun-dried tomatoes (oil-packed or rehydrated if dry)
  • 3 tbsp extra virgin olive oil
  • ½ tsp ground cumin
  • ½ tsp smoked paprika
  • ½ tsp salt (or to taste)
  • 2-3 tbsp water (to adjust consistency)

Optional Garnishes:

  • Drizzle of olive oil
  • Chopped parsley
  • Chopped sun-dried tomatoes
  • Sprinkle of smoked paprika or sesame seeds

Instructions:

  1. Roast the garlic:

    • Preheat your oven to 375°F (190°C). Wrap unpeeled garlic cloves in foil with a drizzle of olive oil. Roast for 20-25 minutes until soft and golden. Let cool, then squeeze out the roasted garlic paste.
  2. Blend the base:

    • In a food processor, combine chickpeas, tahini, roasted garlic, sun-dried tomatoes, lemon juice, cumin, smoked paprika, and salt. Blend until the mixture starts to come together.
  3. Add oil and adjust consistency:

    • With the food processor running, slowly drizzle in olive oil. Add water, 1 tablespoon at a time, until the hummus reaches your desired creamy consistency. Taste and adjust seasoning as needed.
  4. Serve and garnish:

    • Transfer the hummus to a serving bowl. Drizzle with olive oil and sprinkle with smoked paprika or sesame seeds. Garnish with chopped sun-dried tomatoes and parsley for an extra pop of flavor.

Optional Variations:

  • Spicy Version: Add ½ tsp red pepper flakes or a roasted chili for heat.
  • Herbaceous Twist: Blend in fresh basil or cilantro for a green hummus.
  • Nutty Note: Replace some tahini with almond or cashew butter for a different flavor profile.
