Spiced Green Shakshuka with Feta and Avocado 🥑🍳

Ingredients:

  • For the Green Base:

    • 2 tbsp olive oil
    • 1 medium onion, finely chopped
    • 3 garlic cloves, minced
    • 1 medium zucchini, diced
    • 1 green bell pepper, diced
    • 1 cup fresh spinach, roughly chopped
    • 1/2 cup fresh parsley, chopped
    • 1/2 cup fresh cilantro, chopped
    • 1 jalapeño or green chili, finely chopped (optional, for heat)
    • 1/2 cup vegetable broth or water
  • For the Seasoning:

    • 1 tsp ground cumin
    • 1 tsp ground coriander
    • 1/2 tsp smoked paprika
    • 1/2 tsp ground turmeric
    • Salt and black pepper to taste
  • For the Eggs and Garnish:

    • 4-6 large eggs
    • 1/4 cup crumbled feta cheese
    • 1 avocado, sliced
    • 1/4 cup fresh mint leaves (optional)
    • Lemon wedges for serving

Instructions:

  1. Prepare the Green Base:

    • Heat olive oil in a large skillet over medium heat. Add the chopped onion and garlic, and sauté for 3-4 minutes until softened.
    • Add the zucchini and green bell pepper. Cook for another 5 minutes until the vegetables are tender.
  2. Add Greens and Seasoning:

    • Stir in the spinach, parsley, cilantro, and jalapeño (if using). Cook until the greens are wilted, about 2 minutes.
    • Add the cumin, coriander, smoked paprika, turmeric, salt, and black pepper. Mix well.
    • Pour in the vegetable broth or water and let the mixture simmer for 5 minutes, stirring occasionally.
  3. Make the Eggs:

    • Use a spoon to make small wells in the green mixture and crack an egg into each well.
    • Cover the skillet and cook over low heat for 7-10 minutes, or until the egg whites are set and the yolks are still slightly runny (cook longer if you prefer firmer yolks).
  4. Add Feta and Garnish:

    • Sprinkle the crumbled feta over the shakshuka.
    • Add sliced avocado and fresh mint leaves on top for garnish.
  5. Serve:

    • Serve the green shakshuka warm with crusty bread, pita, or toasted flatbread. Squeeze lemon juice over the top for a bright finish.

Optional Variations:

  • Add Protein: Include chickpeas or diced chicken sausage for extra heartiness.
  • Spicier Version: Add cayenne pepper or a splash of hot sauce.
  • Herb Swap: Replace parsley and cilantro with basil or dill for a different flavor profile.
