Spiced Green Shakshuka with Feta and Avocado 🥑🍳
Ingredients:
For the Green Base:
- 2 tbsp olive oil
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 1 medium zucchini, diced
- 1 green bell pepper, diced
- 1 cup fresh spinach, roughly chopped
- 1/2 cup fresh parsley, chopped
- 1/2 cup fresh cilantro, chopped
- 1 jalapeño or green chili, finely chopped (optional, for heat)
- 1/2 cup vegetable broth or water
For the Seasoning:
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp smoked paprika
- 1/2 tsp ground turmeric
- Salt and black pepper to taste
For the Eggs and Garnish:
- 4-6 large eggs
- 1/4 cup crumbled feta cheese
- 1 avocado, sliced
- 1/4 cup fresh mint leaves (optional)
- Lemon wedges for serving
Instructions:
Prepare the Green Base:
- Heat olive oil in a large skillet over medium heat. Add the chopped onion and garlic, and sauté for 3-4 minutes until softened.
- Add the zucchini and green bell pepper. Cook for another 5 minutes until the vegetables are tender.
Add Greens and Seasoning:
- Stir in the spinach, parsley, cilantro, and jalapeño (if using). Cook until the greens are wilted, about 2 minutes.
- Add the cumin, coriander, smoked paprika, turmeric, salt, and black pepper. Mix well.
- Pour in the vegetable broth or water and let the mixture simmer for 5 minutes, stirring occasionally.
Make the Eggs:
- Use a spoon to make small wells in the green mixture and crack an egg into each well.
- Cover the skillet and cook over low heat for 7-10 minutes, or until the egg whites are set and the yolks are still slightly runny (cook longer if you prefer firmer yolks).
Add Feta and Garnish:
- Sprinkle the crumbled feta over the shakshuka.
- Add sliced avocado and fresh mint leaves on top for garnish.
Serve:
- Serve the green shakshuka warm with crusty bread, pita, or toasted flatbread. Squeeze lemon juice over the top for a bright finish.
Optional Variations:
- Add Protein: Include chickpeas or diced chicken sausage for extra heartiness.
- Spicier Version: Add cayenne pepper or a splash of hot sauce.
- Herb Swap: Replace parsley and cilantro with basil or dill for a different flavor profile.
- Vegan Option: Replace eggs with marinated tofu slices and omit the feta.
