Ingredients:

- 1 tbsp tomato paste

- 1 tsp dried rosemary
- 1 tbsp soy sauce or tamari
- 1 cup vegetable stock
- 1 cup frozen peas or green beans
- Salt and pepper to taste
For the sweet potato mash topping:
- 2 large sweet potatoes, peeled and cubed
- 2 tbsp butter (or olive oil for vegan option)
- ¼ cup milk (or plant-based milk)
- ¼ tsp ground cinnamon (optional)
- Salt and pepper to taste
Instructions:
Prepare the filling:
- Heat olive oil in a large skillet over medium heat. Add the onion, carrots, and celery. Cook until softened, about 5-7 minutes.
- Add the mushrooms and garlic, cooking until the mushrooms release their moisture and begin to brown.
- Stir in the lentils, tomato paste, smoked paprika, thyme, and rosemary. Cook for 2 minutes.
- Add the soy sauce and vegetable stock, stirring to combine. Simmer for 10-12 minutes until the mixture thickens slightly. Stir in the peas or green beans and season with salt and pepper. Remove from heat.
Prepare the sweet potato mash:
- Boil the sweet potatoes in salted water until tender, about 15 minutes. Drain and return to the pot.
- Mash the sweet potatoes with butter, milk, cinnamon (if using), salt, and pepper until smooth.
Assemble the shepherd’s pie:
- Preheat the oven to 375°F (190°C).
- Spread the vegetable filling evenly in a greased baking dish. Top with the sweet potato mash, spreading it out or creating peaks with a fork.
Bake:
- Bake for 20-25 minutes, or until the top is slightly golden and the filling is bubbling around the edges.
