  • For the filling:

    • 2 tbsp olive oil
    • 1 medium onion, finely chopped
    • 2 carrots, diced
    • 2 celery stalks, diced
    • 1 cup diced mushrooms (e.g.cremini or button)
    • 2 garlic cloves, minced
    • 1 cup cooked lentils (or canned, drained, and rinsed)
    • 1 tbsp tomato paste
    • 1 tsp smoked paprika
    • 1 tsp dried thyme
    • 1 tsp dried rosemary
    • 1 tbsp soy sauce or tamari
    • 1 cup vegetable stock
    • 1 cup frozen peas or green beans
    • Salt and pepper to taste
  • For the sweet potato mash topping:

    • 2 large sweet potatoes, peeled and cubed
    • 2 tbsp butter (or olive oil for vegan option)
    • ¼ cup milk (or plant-based milk)
    • ¼ tsp ground cinnamon (optional)
    • Salt and pepper to taste

Instructions:

  1. Prepare the filling:

    • Heat olive oil in a large skillet over medium heat. Add the onion, carrots, and celery. Cook until softened, about 5-7 minutes.
    • Add the mushrooms and garlic, cooking until the mushrooms release their moisture and begin to brown.
    • Stir in the lentils, tomato paste, smoked paprika, thyme, and rosemary. Cook for 2 minutes.
    • Add the soy sauce and vegetable stock, stirring to combine. Simmer for 10-12 minutes until the mixture thickens slightly. Stir in the peas or green beans and season with salt and pepper. Remove from heat.
  2. Prepare the sweet potato mash:

    • Boil the sweet potatoes in salted water until tender, about 15 minutes. Drain and return to the pot.
    • Mash the sweet potatoes with butter, milk, cinnamon (if using), salt, and pepper until smooth.
  3. Assemble the shepherd’s pie:

    • Preheat the oven to 375°F (190°C).
    • Spread the vegetable filling evenly in a greased baking dish. Top with the sweet potato mash, spreading it out or creating peaks with a fork.
  4. Bake:

    • Bake for 20-25 minutes, or until the top is slightly golden and the filling is bubbling around the edges.
  5. Serve:

    • Let cool for 5 minutes before serving. Pair with a crisp side salad or steamed greens for a nutritious meal.

Optional Variations:

  • Add a sprinkle of grated Parmesan or vegan cheese on top for added richness.
  • Replace sweet potato with mashed Yukon Gold potatoes for a traditional twist.
  • Incorporate chopped zucchini or bell peppers for extra veggies.
