Flaky Whole-Wheat Roti with Herb Butter 🫓🌿
Ingredients:
For the Dough:
- 2 cups whole wheat flour (atta)
- 1/4 tsp salt
- 3/4 cup warm water (adjust as needed)
- 1 tbsp vegetable oil or melted ghee
For Cooking:
- 1/4 cup all-purpose flour (for dusting)
- 2 tbsp ghee or butter (optional, for brushing)
Optional Herb Butter:
- 2 tbsp unsalted butter, melted
- 1 tsp finely chopped fresh cilantro or parsley
- 1/4 tsp garlic powder (optional)
- Pinch of salt
Instructions:
Prepare the Dough:
- In a large bowl, combine the whole wheat flour and salt. Gradually add warm water while mixing until the dough comes together.
- Add the vegetable oil or melted ghee, and knead the dough for 8-10 minutes until soft and smooth.
- Cover the dough with a damp cloth and let it rest for 30 minutes.
Divide and Roll:
- Divide the dough into 8 equal portions and shape each portion into a ball.
- Dust a rolling surface and rolling pin with all-purpose flour. Roll each ball into a thin, circular disc about 6-8 inches in diameter.
Cook the Roti:
- Heat a flat skillet or tawa over medium-high heat until hot. Place a rolled-out roti on the skillet.
- Cook for about 30 seconds until bubbles form, then flip it over. Cook the second side for about 30 seconds.
- Flip again and press lightly with a spatula or clean cloth. The roti should puff up. Cook for another 20-30 seconds until there are golden spots.
- Repeat with the remaining dough balls.
Prepare Herb Butter (Optional):
- In a small bowl, mix the melted butter with chopped herbs, garlic powder (if using), and a pinch of salt.
Brush and Serve:
- Brush the hot rotis with plain ghee or the prepared herb butter for added flavor.
- Serve warm with curries, dals, or use them as wraps for fillings.
Optional Variations:
- Flavored Dough: Add 1/2 tsp cumin seeds, crushed fennel seeds, or chopped fresh spinach to the dough for a twist.
- Stuffed Roti: Fill the rolled-out dough with mashed spiced potatoes or grated cheese before sealing and rolling again.
- Vegan Option: Replace butter or ghee with plant-based margarine or omit entirely.
