Ingredients:

  • For the chicken:

    • 1 lb boneless, skinless chicken thighs
    • 2 tbsp olive oil
    • 1 tbsp chipotle chili powder
    • 1 tsp smoked paprika
    • 1 tsp garlic powder
    • 1 tsp onion powder
    • ½ tsp ground cumin
    • ½ tsp salt
    • Juice of 1 lime
  • For the rice and beans:

    • 1 cup cooked white or brown rice
    • 1 tsp lime zest
    • 1 tbsp lime juice
    • 2 tbsp chopped fresh cilantro
    • 1 cup black beans, rinsed and drained
  • For assembly:

    • 4 large flour tortillas
    • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
    • 1 avocado, sliced
    • 1 cup shredded lettuce
    • ½ cup salsa or pico de gallo
    • ½ cup sour cream or Greek yogurt
    • Hot sauce (optional)

Instructions:

  1. Prepare the chicken:

    • In a bowl, mix olive oil, chipotle chili powder, smoked paprika, garlic powder, onion powder, cumin, salt, and lime juice.
    • Add the chicken thighs and coat well. Marinate for at least 20 minutes (or up to 2 hours for deeper flavor).
  2. Cook the chicken:

    • Heat a large skillet over medium-high heat. Add the marinated chicken and cook for 4-5 minutes per side, or until fully cooked. Let rest for 5 minutes, then slice or shred the chicken.
  3. Prepare the rice and beans:

    • In a bowl, mix the cooked rice with lime zest, lime juice, and chopped cilantro. Stir in the black beans.
  4. Warm the tortillas:

    • Heat the tortillas in a dry skillet or microwave until pliable.
  5. Assemble the burritos:

    • Place a tortilla on a flat surface. Add a layer of rice and beans, followed by sliced chicken, shredded cheese, avocado slices, shredded lettuce, salsa, and a dollop of sour cream.
    • Drizzle with hot sauce if desired.
  6. Wrap the burritos:

    • Fold in the sides of the tortilla, then roll it tightly from the bottom to form a burrito.
  7. Serve:

    • Serve immediately or heat the assembled burritos in a skillet for 1-2 minutes per side to create a crispy exterior.

  • Vegetarian Option: Replace chicken with grilled vegetables or spiced tofu.
