Chipotle Chicken and Avocado Burrito 🌯✨
Ingredients:
For the chicken:
- 1 lb boneless, skinless chicken thighs
- 2 tbsp olive oil
- 1 tbsp chipotle chili powder
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp ground cumin
- ½ tsp salt
- Juice of 1 lime
For the rice and beans:
- 1 cup cooked white or brown rice
- 1 tsp lime zest
- 1 tbsp lime juice
- 2 tbsp chopped fresh cilantro
- 1 cup black beans, rinsed and drained
For assembly:
- 4 large flour tortillas
- 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
- 1 avocado, sliced
- 1 cup shredded lettuce
- ½ cup salsa or pico de gallo
- ½ cup sour cream or Greek yogurt
- Hot sauce (optional)
Instructions:
Prepare the chicken:
- In a bowl, mix olive oil, chipotle chili powder, smoked paprika, garlic powder, onion powder, cumin, salt, and lime juice.
- Add the chicken thighs and coat well. Marinate for at least 20 minutes (or up to 2 hours for deeper flavor).
Cook the chicken:
- Heat a large skillet over medium-high heat. Add the marinated chicken and cook for 4-5 minutes per side, or until fully cooked. Let rest for 5 minutes, then slice or shred the chicken.
Prepare the rice and beans:
- In a bowl, mix the cooked rice with lime zest, lime juice, and chopped cilantro. Stir in the black beans.
Warm the tortillas:
- Heat the tortillas in a dry skillet or microwave until pliable.
Assemble the burritos:
- Place a tortilla on a flat surface. Add a layer of rice and beans, followed by sliced chicken, shredded cheese, avocado slices, shredded lettuce, salsa, and a dollop of sour cream.
- Drizzle with hot sauce if desired.
Wrap the burritos:
- Fold in the sides of the tortilla, then roll it tightly from the bottom to form a burrito.
Serve:
- Serve immediately or heat the assembled burritos in a skillet for 1-2 minutes per side to create a crispy exterior.
Optional Variations:
- Vegetarian Option: Replace chicken with grilled vegetables or spiced tofu.
- Extra Flavor: Add a spoonful of guacamole or roasted corn salsa.
