Pea and Mint Soup

Ingredients
- 2 tbsp olive oil or butter
- 1 small onion, finely chopped
- 1 garlic clove, minced
- 4 cups vegetable broth (or chicken broth)
- 4 cups frozen or fresh peas
- ½ cup fresh mint leaves, chopped
- ½ cup heavy cream or Greek yogurt (optional, for creaminess)
- Salt & black pepper, to taste
- Juice of ½ lemon (for brightness)
For Garnish:
- Fresh mint leaves
- Crème fraîche or Greek yogurt (optional)
- Croutons or toasted bread
Instructions
1. Sauté the Aromatics:
- Heat olive oil or butter in a pot over medium heat.
- Add the chopped onion and cook for 3–4 minutes, until soft.
- Stir in the garlic and cook for 30 seconds, until fragrant.
2. Cook the Soup:
- Pour in the vegetable broth and bring to a simmer.
- Add the peas and cook for 5 minutes (until tender but still vibrant green).
3. Blend & Season:
- Remove from heat and add fresh mint leaves.
- Using a blender or immersion blender, purée the soup until smooth.
- Stir in the lemon juice and optional cream or yogurt.
- Season with salt and black pepper to taste.
4. Serve & Garnish:
- Ladle into bowls and swirl in crème fraîche or yogurt.
- Garnish with fresh mint leaves and croutons.
