Pea and Mint Soup

Ingredients

  • 2 tbsp olive oil or butter
  • 1 small onion, finely chopped
  • 1 garlic clove, minced
  • 4 cups vegetable broth (or chicken broth)
  • 4 cups frozen or fresh peas
  • ½ cup fresh mint leaves, chopped
  • ½ cup heavy cream or Greek yogurt (optional, for creaminess)
  • Salt & black pepper, to taste
  • Juice of ½ lemon (for brightness)

For Garnish:

  • Fresh mint leaves
  • Crème fraîche or Greek yogurt (optional)
  • Croutons or toasted bread

Instructions

1. Sauté the Aromatics:

  1. Heat olive oil or butter in a pot over medium heat.
  2. Add the chopped onion and cook for 3–4 minutes, until soft.
  3. Stir in the garlic and cook for 30 seconds, until fragrant.

2. Cook the Soup:

  1. Pour in the vegetable broth and bring to a simmer.
  2. Add the peas and cook for 5 minutes (until tender but still vibrant green).

3. Blend & Season:

  1. Remove from heat and add fresh mint leaves.
  2. Using a blender or immersion blender, purée the soup until smooth.
  3. Stir in the lemon juice and optional cream or yogurt.
  4. Season with salt and black pepper to taste.

4. Serve & Garnish:

  1. Ladle into bowls and swirl in crème fraîche or yogurt.
  2. Garnish with fresh mint leaves and croutons.
