Kibbe ling (Dutch Fried Fish Bites)

(A popular Dutch street food—crispy battered white fish bites served with a tangy dipping sauce!)


Ingredients

For the Fish:

  • 1 lb white fish fillets (cod, haddock, or pollock), cut into bite-sized chunks
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • ½ tsp garlic powder

For the Batter:

  • 1 cup (125g) all-purpose flour
  • ½ cup (65g) cornstarch
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ½ tsp dried dill (optional)
  • ¾ cup (180ml) cold sparkling water or beer
  • Vegetable oil, for frying

For the Garlic Mayonnaise (Remoulade Sauce):

  • ½ cup mayonnaise
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • 1 tbsp dill pickles, finely chopped
  • 1 tsp Dijon mustard
  • ½ tsp paprika
  • Salt & pepper, to taste

Instructions

1. Prepare the Fish:

  1. Pat fish dry with paper towels.
  2. Season with salt, pepper, paprika, and garlic powder.

2. Make the Batter:

  1. In a bowl, mix flour, cornstarch, baking powder, salt, paprika, garlic powder, and dill.
  2. Gradually whisk in cold sparkling water or beer until smooth. The batter should be thick enough to coat the back of a spoon.

3. Fry the Kibbeling:

  1. Heat oil in a deep pan or fryer to 350°F (175°C).
  2. Dip fish pieces into the batter, allowing excess to drip off.
  3. Carefully drop into the hot oil and fry for 3–4 minutes, turning occasionally, until golden brown and crispy.
  4. Remove with a slotted spoon and drain on paper towels.

4. Make the Sauce:

  1. Mix all sauce ingredients in a small bowl. Adjust seasoning to taste.

5. Serve & Enjoy:

  • Serve kibbeling hot with garlic mayo and lemon wedges.
  • Optional: Serve with a side of fries or Dutch-style tartar sauce.
