Kibbe ling (Dutch Fried Fish Bites)
(A popular Dutch street food—crispy battered white fish bites served with a tangy dipping sauce!)
Ingredients
For the Fish:
- 1 lb white fish fillets (cod, haddock, or pollock), cut into bite-sized chunks
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp paprika
- ½ tsp garlic powder
For the Batter:
- 1 cup (125g) all-purpose flour
- ½ cup (65g) cornstarch
- 1 tsp baking powder
- ½ tsp salt
- ½ tsp paprika
- ½ tsp garlic powder
- ½ tsp dried dill (optional)
- ¾ cup (180ml) cold sparkling water or beer
- Vegetable oil, for frying
For the Garlic Mayonnaise (Remoulade Sauce):
- ½ cup mayonnaise
- 1 tbsp lemon juice
- 1 clove garlic, minced
- 1 tbsp dill pickles, finely chopped
- 1 tsp Dijon mustard
- ½ tsp paprika
- Salt & pepper, to taste
Instructions
1. Prepare the Fish:
- Pat fish dry with paper towels.
- Season with salt, pepper, paprika, and garlic powder.
2. Make the Batter:
- In a bowl, mix flour, cornstarch, baking powder, salt, paprika, garlic powder, and dill.
- Gradually whisk in cold sparkling water or beer until smooth. The batter should be thick enough to coat the back of a spoon.
3. Fry the Kibbeling:
- Heat oil in a deep pan or fryer to 350°F (175°C).
- Dip fish pieces into the batter, allowing excess to drip off.
- Carefully drop into the hot oil and fry for 3–4 minutes, turning occasionally, until golden brown and crispy.
- Remove with a slotted spoon and drain on paper towels.
4. Make the Sauce:
- Mix all sauce ingredients in a small bowl. Adjust seasoning to taste.
5. Serve & Enjoy:
- Serve kibbeling hot with garlic mayo and lemon wedges.
- Optional: Serve with a side of fries or Dutch-style tartar sauce.
