Ingredients

Meats:

  • 1 lb pulled pork (smoked or slow-cooked)
  • 1 lb shredded chicken (rotisserie or slow-cooked)
  • ½ lb beef brisket (cubed or shredded)
  • ½ lb smoked sausage (sliced)
  • 4 slices bacon (chopped)

Vegetables:

  • 1 large onion (diced)
  • 3 carrots (sliced)
  • 3 stalks celery (chopped)
  • 3 cloves garlic (minced)
  • 2 cups potatoes (diced)
  • 1 cup okra (sliced)
  • 1 cup lima beans
  • 2 cups corn kernels
  • 1 cup fire-roasted tomatoes (diced)

Broth & Seasonings:

  • 6 cups chicken broth (or a mix of chicken & beef broth)
  • 1 cup tomato sauce
  • 2 tbsp apple cider vinegar
  • 1 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • 1 tsp cayenne pepper (adjust to taste)
  • 1 tsp thyme
  • 1 tsp black pepper
  • 2 bay leaves
  • Salt (to taste)

Thickener:

  • 2 tbsp butter
  • 2 tbsp flour (for slight thickening)

Instructions

  1. Cook the Bacon & Sausage:

    • In a large pot, cook bacon until crispy. Remove and set aside.
    • In the same pot, brown smoked sausage for 2 minutes. Remove and set aside.
  2. Sauté the Vegetables:

    • Add butter to the pot. Sauté onion, garlic, carrots, celery, and potatoes for 5 minutes.
    • Sprinkle in flour and stir for 1 minute.
  3. Build the Stew Base:

    • Pour in chicken broth, tomato sauce, fire-roasted tomatoes, Worcestershire sauce, and apple cider vinegar.
    • Add thyme, paprika, cayenne, black pepper, and bay leaves.
    • Stir well and bring to a simmer.
  4. Add the Meats:

    • Stir in pulled pork, shredded chicken, brisket, and sausage.
    • Simmer for 30 minutes, stirring occasionally.
  5. Add Final Vegetables:

    • Stir in corn, lima beans, and okra.
    • Simmer for 10 more minutes until vegetables are tender.
  6. Final Touches & Serve:

    • Remove bay leaves.
    • Adjust seasoning with salt and more vinegar if needed.
    • Stir in crispy bacon before serving.
