Ingredients

Meat:

  • ½ lb pork tenderloin (thinly sliced into strips)
  • 1 tsp soy sauce
  • 1 tsp Shaoxing wine (or dry sherry)
  • ½ tsp cornstarch
  • ½ tsp white pepper

Vegetables & Add-Ins:

  • 4 cups chicken or pork broth
  • 1 cup shiitake mushrooms (thinly sliced, or use wood ear mushrooms)
  • ½ cup bamboo shoots (julienned)
  • ½ cup carrots (julienned)
  • 1 small block of firm tofu (cubed or sliced)
  • 2 green onions (sliced, for garnish)
  • 1 tbsp ginger (minced)
  • 2 cloves garlic (minced)

Broth Seasoning:

  • 3 tbsp soy sauce
  • 3 tbsp rice vinegar (or black vinegar)
  • 1 tsp dark soy sauce (for richer color, optional)
  • 1 tsp sugar
  • ½ tsp white pepper (or more, for extra heat)
  • 1 tbsp chili oil (optional, for heat)

Thickener & Egg Swirl:

  • 2 tbsp cornstarch mixed with 3 tbsp water (for thickening)
  • 1 egg, lightly beaten

Final Garnish & Extras:

  • 1 tsp sesame oil
  • ½ tsp Sichuan peppercorn powder (optional, for numbing spice)
  • Extra white vinegar or chili oil for adjusting flavor

Instructions

  1. Marinate the Pork:

    • In a small bowl, mix pork strips with soy sauce, Shaoxing wine, cornstarch, and white pepper. Let it marinate for 10 minutes.
  2. Prepare the Broth:

    • In a large pot, heat a small amount of oil.
    • Sauté garlic and ginger for about 30 seconds until fragrant.
    • Pour in chicken or pork broth and bring to a simmer.
  3. Add Vegetables & Seasoning:

    • Stir in mushrooms, bamboo shoots, carrots, and tofu.
    • Add soy sauce, dark soy sauce, rice vinegar, sugar, and white pepper.
    • Let simmer for 5 minutes to blend flavors.
  4. Cook the Pork:

    • Add the marinated pork slices to the simmering broth.
    • Stir gently to separate the pieces. Cook for about 3-4 minutes, until pork is fully cooked.
  5. Thicken the Soup:

    • Slowly stir in the cornstarch slurry while stirring continuously.
    • Let the soup simmer for another 1-2 minutes until slightly thickened.
  6. Create the Egg Swirl:

    • Slowly drizzle the beaten egg into the soup in a thin stream while stirring gently to create silky egg ribbons.
  7. Final Touches & Serving:

    • Drizzle in sesame oil and stir.
    • Garnish with green onions and extra white vinegar or chili oil as desired.
