Ingredients
Meats:
- 1 ½ lbs corned beef brisket (or smoked ham hock)
- ½ lb smoked sausage (sliced) (optional, for extra depth)
- 4 slices bacon (chopped, for added smokiness) (optional)
Vegetables:
- 1 large onion (diced)
- 3 carrots (sliced)
- 3 stalks celery (chopped)
- 3 cloves garlic (minced)
- 2 cups cabbage (chopped)
- 2 cups potatoes (diced)
- 1 medium parsnip (chopped) (adds a mild sweetness)
- 1 medium turnip or rutabaga (chopped) (adds an earthy flavor)
- 1 cup green beans (chopped) (optional, for color & texture)
Broth & Seasonings:
- 6 cups beef or ham broth (or a mix of both)
- 2 cups water (as needed)
- ½ cup beer or apple cider (for deeper flavor, optional)
- 1 tsp thyme
- 1 tsp black pepper
- 1 tsp smoked paprika (optional, for depth)
- ½ tsp dried mustard powder (enhances the corned beef flavor)
- 2 bay leaves
- Salt (to taste)
Extras:
- 2 tbsp butter (for richness)
- 2 tbsp flour (optional, for slight thickening)

Instructions
Cook the Bacon & Sausage (if using):
- In a large pot, cook bacon until crispy. Remove and set aside.
- Brown smoked sausage in the same pot for 2 minutes. Remove and set aside.
Prepare the Corned Beef (if using a whole brisket):
- Place corned beef brisket in the pot and cover with broth & water.
- Add bay leaves, thyme, mustard powder, and black pepper.
- Simmer for 1 ½ - 2 hours, until the meat is fork-tender.
- Remove brisket, let it rest for 10 minutes, then slice or shred.
Sauté the Vegetables:
- In the same pot, melt butter and sauté onion, garlic, carrots, celery, parsnips, and turnips.
- Cook for 5 minutes until softened.
- Sprinkle in flour and stir to coat the vegetables (if using for a thicker broth).
Simmer the Soup:
- Pour in broth, beer (or apple cider), and potatoes.
- Add back the corned beef, bacon, and sausage.
- Simmer for 30 minutes, until potatoes are tender.
Add Final Ingredients:
- Stir in cabbage, green beans, and apple cider vinegar.
- Simmer for 5-10 more minutes, until the cabbage is tender.
Final Touches & Serve:
- Remove bay leaves.
- Adjust seasoning with salt and extra black pepper if needed.
- Garnish with fresh parsley.
