Ingredients

For the Pork Wontons:

  • ½ lb ground pork
  • 2 green onions (finely chopped)
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp Shaoxing wine (or dry sherry)
  • ½ tsp grated ginger
  • 1 clove garlic (minced)
  • ½ tsp white pepper
  • ½ tsp sugar
  • 1 tsp cornstarch (for binding)
  • 24 wonton wrappers

For the Wonton Soup Broth:

  • 4 cups chicken broth (or pork broth for a deeper flavor)
  • 2 cups water
  • 1 tbsp soy sauce
  • ½ tsp white pepper
  • 1 tsp sesame oil
  • 2 garlic cloves (smashed)
  • 1-inch ginger (sliced)
  • 2 green onions (chopped, for garnish)
  • 1 cup baby bok choy (or napa cabbage, chopped)
  • ½ cup sliced mushrooms (shiitake or cremini, optional for extra umami)

Optional Garnishes:

  • ½ tsp chili oil (for spice, optional)
  • Crispy fried garlic or shallots (for crunch, optional)

Instructions

1. Make the Pork Wontons:

  • In a bowl, mix ground pork, green onions, soy sauce, sesame oil, Shaoxing wine, ginger, garlic, white pepper, sugar, and cornstarch until well combined.
  • Let the mixture rest for 10 minutes to absorb flavors.
  • Place 1 tsp of pork filling in the center of each wonton wrapper.
  • Moisten the edges with water, fold into a triangle, and press to seal.
  • Bring the two bottom corners together and press to form the classic wonton shape.

2. Prepare the Wonton Soup Broth:

  • In a large pot, heat chicken broth and water over medium heat.
  • Add garlic, ginger, soy sauce, white pepper, and mushrooms (if using).
  • Simmer for 10 minutes, then strain out the garlic and ginger for a smooth broth.

3. Cook the Wontons & Vegetables:

  • Bring the broth to a gentle boil.
  • Drop in the wontons, stirring gently to prevent sticking.
  • Cook for 3-5 minutes, until the wontons float to the top.
  • Add bok choy and let simmer for 1-2 more minutes until tender.

4. Serve & Garnish:

  • Ladle the wontons and broth into serving bowls.
  • Garnish with chopped green onions, chili oil, or crispy garlic as desired.
