Zesty Mango and Lime Guacamole

Ingredients:

  • 3 ripe avocados
  • 1 ripe mango, diced
  • 1 small red onion, finely chopped
  • 1 small jalapeño, finely chopped (seeds removed for less heat)
  • 2 tbsp fresh cilantro, chopped
  • Juice and zest of 1 lime
  • 1 tsp garlic powder
  • ½ tsp ground cumin
  • ½ tsp salt (or to taste)
  • ¼ tsp black pepper

Instructions:

  1. Prepare the avocados:

    • Cut the avocados in half, remove the pits, and scoop the flesh into a large mixing bowl.
    • Mash the avocados with a fork or potato masher until you reach your desired texture (smooth or chunky).
  2. Add the mango and veggies:

    • Stir in the diced mango, red onion, jalapeño, and chopped cilantro.
  3. Season the guacamole:

    • Add lime juice, lime zest, garlic powder, cumin, salt, and black pepper. Mix until well combined.
  4. Taste and adjust:

    • Taste the guacamole and adjust seasoning if needed. Add more lime juice for tanginess, salt for flavor, or jalapeño for heat.
  5. Serve:

    • Transfer the guacamole to a serving bowl and garnish with a few extra mango cubes and a sprinkle of cilantro. Serve immediately with tortilla chips, fresh veggies, or as a topping for tacos and burritos.
